Every Mom has a challenge what to cook for school lunch. Kids don’t want to carry same lunch again and again. Here is an idea which does require some prior preparation but can be done quickly in the morning. Veg fajita rolls are favorite of my kids. This recipe is easy to prepare. I generally do all preparation at night, like making dough and cutting vegetables. Early morning just make fajita and tortilla.
Ingredients
For Fajita
- 200g Paneer or tofu
- 1 Red bell pepper lengthwise cut
- 1 Green bell Pepper lengthwise cut
- 1 medium Onion lengthwise cut
- 1 Zucchini lengthwise cut
- 1/4 cup Spring onion chopped
- 2 tbsp Fajita seasoning
- 1/4 tsp Black pepper powder
- 1/2 tsp Paprika
- 1/2 lemon juice
- Salt to taste
- 1 tbsp Oil for cooking
For tricolor tortilla or roti
- 3 cup Wheat flour
- Water for kneading If needed
- 4 carrot puree
- 1 bunch Spinach puree
- 1/4 tsp Salt for each cups
For Wrapping
Instructions
- If you don't want the colorful, make plain dough. For colorful dough, grind spinach and carrot separately and make a puree. Divide the wheat flour in a three parts, 1 cup for spinach, 1 cup for carrot and 1 cup for plain dough. Add puree in flour gradually and ( add water if needed) make a semi soft dough. Cover it and keep it in refrigerator.
- When tava gets hot enough bring the temperature at medium heat. place the raw tortilla for cooking. Once you see small bubbles popping up on tortilla, turn it over. Grease some oil on both side. Cook both side till light golden color. Once it done, cover it so it will be soft. Make how much you want, if some dough left refrigerate in airtight container.
