Clean baby brinjal with water and slit it from four side. Keep it aside.
Heat oil in kadhai at medium heat. Once its hot enough, add panch phoran in to it. Wait till it starts crackling then add onion, green chili, salt and ginger- garlic paste. Saute it for 12-15 min until onion gets golden brown color.
Add tomato puree and saute it for 1 more min. Add coriander, cumin powder, turmeric powder, achari masala & amchoor powder in it. Saute for 1 more min till masala is fried very well.
Once its done, turn off the heat and add chopped onion and mix it well. Stuffing masala is ready. Let it cool down.
Fill the masala into brinjal from all four sides.
Fill all brinjal and keep it aside.
Heat 2 tbsp of oil in the same kadhai which was used for making filling. Place all stuffed brinjal into hot oil and stir-fry them from all sides at medium heat until brinjal gets tender and roasted from all side.
Once its done, turn off the heat and place the fried brinjal in serving plate.
Stuffed tangy and tasty brinjal’s are ready to be served.
Serve with simple daal-rice or roti as a side dish. Stuffed brinjal can be store in air tight container for one week in refrigerator.
