In India there are variety of food which are very local to certain areas. Rolled besan curry is one of them and mainly prepared in northern part of UP and Bihar. My mother used to make this recipe often when she used to run out of vegetables and I loved it every time. You can make this recipe without much preparation when you don’t feel like making vegetable curry. The recipe is prepared by rolling besan batter on tava and simmer into a spicy tomato based gravy. I have earlier shared a different variation of besan curry named as Besan ki Sabji. If you don’t want to make roll based, you can prepare Besan ki sabji instead. The rolled besan curry goes very well with Partha, phulka and rice.
- 1-1/2 cup Gram flour( besan)
- 1 tbsp Garlic paste
- 5-6 Green chili finely chopped
- 1/8 tsp Asafoetida (hing)
- 1/2 tsp Turmeric powder
- 1/2 tsp Garam masala powder
- Salt to taste
- 3/4 cup Butter milk approximately
- Some oil for making besan rolls
- 5 tbsp Oil
- 2 Bay leaves
- 1/2 tsp Cumin Seeds
- 2 medium Onion finely chopped
- 1/8 tsp Asafoetida (hing)
- 1 tbsp Garlic paste
- 2 tsp Ginger paste
- 3 Tomato puree
- 2'' Beetroot optional
- 1/2 tsp Turmeric powder
- 2 tsp Coriander & cumin powder each
- 1 tsp Chili powder
- 1/4 tsp Black pepper powder
- 1/2 tsp Garam masala powder
- While batter is getting set, you can start preparing for curry using next section. To make the besan roll, heat a non-stick pan at medium heat. Take one scoop of batter and pour in center of pan and start spreading in circular motion with the help of the scoop similar to how dosa is spread to make a semi thick besan dosa.
- Heat oil in a kadhai at medium heat. Once its hot add cumin seeds. Once cumin seeds gets brown in color, add bay leaves and sauté for few sec. Add onion, hing and ginger-garlic paste and little salt and sauté the onion gets golden color. Add tomato & beetroot puree in to it. Saute tomato puree for 3-4 minutes.
- Add 3 cups of water and stir the curry. Add garam masala and let it boil for 1 minute. While it is boiling add add besan roll pieces in to boiling curry. Stir and simmer for 2-3 minutes with lid on. Once its done, turn off the heat and leave it covered for 10 minutes before serving. After some time if curry may get thicker so add hot water to adjust the consistency of curry as per your choice.
