Mix Daal Dosa is one of the many different types of Dosa found in South India. Mix daal dosa is prepared using a variety of daal (pulses), beans, quinoa and brown rice. Mix daal dosa is full of protein and a very healthy breakfast. Adding quinoa to the recipe makes it even more healthy and delicious. This dosa does not require overnight fermentation process, however, if you wish you can leave it for 3-4 hours to ferment. If you like your Dosa crispy, you can add a little rice flour into batter. Normally, this dosa is served with potato masala, sambar and coconut chutney. You can also try it with guacamole and it tastes just as good.
- 1 cup Idli rice
- 1/2 cup Brown rice
- 1/2 cup Dry roasted quinoa
- 2 tbsp Green split peas
- 2 tbsp Whole green moong daal
- 2 tbsp Black chana
- 2 tbsp Kidney beans
- 2 tbsp Chana Daal
- 2 tsp Toor daal
- 2 tbsp Blackeyes beans
- 2 tbsp Garbanzo beans( chick peas )
- 3 tbsp Rice Flour
- 7-8 Fresh curry leaves
- 1/2 tsp Fenugreek seeds
- 2 Whole red chili
- 1 tsp Cumin Seeds
- Salt to taste
- Some oil for making dosa
- Next day, drain the water in a separate bowl, grind the mix in a grinder using the same water. Grind till batter gets smooth, add more water if required. The batter consistency should be not very thick and not very thin. Add salt to taste and mix. Once it's done, cover it and keep it aside for 3-4 hrs for fermentation (optional but recommended). You can also make dosa immediately after grinding. Before making dosa, add 3 tbsp rice flour into the batter and mix to make crispy dosa.
- You can also give it a cone shape. Take a one big scoop dosa batter, pour in center and spread it in round circle evenly. Let dosa cook at medium heat until dosa gets golden brown. Pour some oil and spread over the dosa. Cut the dosa from the center to edge using knife (radius of circle). Start folding from the cut edge to give a cone shape.
The batter can be also used for set dosa as well as paniyaram for kids lunch box. Add little bit of baking soda to the batter before making it.
