Instructions
  1. Cut pumpkin into small pieces.
  2. Peel and clean it with water. Grate it using a grater.
  3. Keep aside.
  4. Heat ghee in a pan at medium heat. Add grated pumpkin and roast it for 2-3 minutes and stirring continuously. Once it’s done, turn off the heat.
  5. Boil milk along with brown sugar or sugar for 2-3 minutes.
  6. Add roasted pumpkin into boiling milk and cook for 5-6 minutes at low to medium heat.
  7. Add cardamom, saffron threads, freshly grated nutmeg and pistachios into it.
  8. Stir and mix it very well. Turn off the heat. Keep it covered.
  9. When it cools down, transfer it into serving bowls.
  10. Delicious pumpkin kheer is ready for dessert.
  11. Serve it chilled or hot as you prefer.
