Instructions
  1. Clean the chicken with running water and drain it. Take chicken in a deep bowl, add all the ingredient which is listed in chicken marination section. Mix it very well. Cover it and keep it aside for 2 hrs.
  2. Preheat the oven at 400 degree F in baking mode. Wrap marinated chicken in aluminium foil and place it on baking tray. Place the tray in preheated oven. Let it cook for about 25 min. Chicken should tender. You could also grill the chicken on griddle.
  3. Remove the chicken from the oven and let it cool down along with foil. Take out the chicken from the aluminium foil once it cools down, and cut into pieces. Keep it aside.
  4. While chicken is cooking, boil spaghetti. To boil spaghetti, take 4 cups of water with 1 tbsp oil and salt in a big pan. Once it comes to boil, add raw spaghetti and stir and cook till spaghetti gets tender in about 10-15 minutes.
  5. Turn off the heat, strain using a big strainer and pour some oil on boiled spaghetti and mix so that it would not get sticky.
  6. Heat oil in frying pan at medium heat. Add chopped garlic in to it. Saute garlic till slightly golden color. Add chopped red bell peppers, carrots and saute for 45 sec. Add chopped chicken and pesto sauce and saute for few sec.
  7. Add boiled spaghetti in to it and mix well.
  8. Add pine nuts, Parmesan cheese, pepper powder and chili flakes. Stir it very nicely until pesto sauce gets coated very well on chicken and spaghetti. Turn off the heat.
  9. Chicken pesto spaghetti is ready to be served. Garnish with basil leaves and Parmesan cheese and serve it hot with garlic bread.
