Chicken biryani is one of the most popular non vegetarian dish across India. The recipe is prepared using chicken and basmati rice. Preparing Chicken Biryani is little intense process however results could be pretty satisfying. Enjoy this dish with your family on a weekend.
Ingredients
For Marination
- 900g Chicken cut in to medium size
- 1/2 cup Thick curd Greek yogurt
- 1/4 tsp Turmeric powder
- 1/2 lemon juice
- 2 tsp Ginger and Garlic paste each
- 2 tbsp Olive oil
- 1/4 tsp Red chili powder
- 2 tsp Salt salt to taste
Gram Masala
- 1'' Cinnamon Stick
- 3 florets Javitri (Mace)
- 2 Black cardamom
- 6 Cloves
- 1/2 tsp Black pepper
- 2 Green cardamom
For Fried Onion
- 1 large Onion cut in to leanth
- 1-1/2 tbsp Rice Flour
- 1 cup Canola oil for frying
For Rice
- 3 cup Basmati rice soaked
- 10 cup Water
- 1/4 tsp Cumin Seeds
- 1/4 tsp Shah jeera
- 2 tbsp Olive oil
- 3 tsp Salt
- 2 Bay leaves
- 4 Cloves
- 2 Black cardamom
- 2 Green cardamom
- 1'' Cinnamon Stick
- 1 floret Javitri (Mace)
For Biryani
- 1 medium Onion chopped
- 1 medium Tomato chopped
- 3 tbsp Olive oil
- 1/2 tsp Cumin Seeds
- 1 bay leave
- 4 tbsp Ghee
- 1/3 cup Fresh mint leaves chopped
- 2 tsp Biryani Masala available in Indian grocery store
- 1/3 cup Fresh coriander leaves chopped
- 1/4 tsp Saffron soaked into 4 tbsp warm milk
- 2-3 drops kewra essence
- 2 tbsp Ginger Julienne
- 1/3 cup Heavy whipping cream optional

Marinating Chicken
Cooking Rice
- Add 10 cup water in a deep pan, add all the ingredients listed in for Rice section. You can adjust the salt to ensure the water is medium salty. Boil the water with all the ingredients at medium to high heat. Add rice in the boiling water, and cook the rice in a medium heat until it is 60% cooked. Drain all the water from the rice and keep it aside uncovered.
