Garlic Naan Without Yeast

Naan is a very famous Indian flat bread across India and now even in other part of the world. My kids are big fan of naan and kulcha. There are many type of naan you can find, like plain naan, butter naan, garlic naan, paneer naan and so on. The garlic naan is made using all purpose flour(maida), yogurt, baking powder, baking soda which is kneaded with warm milk. This recipe is without yeast but also you can make naan using yeast. The garlic naan is topped with chopped garlic, coriander leaves and Kalongi (nigella) seeds. You can also make it using normal wheat flour however the texture and taste would be different.  Traditionally, naan is made in a clay tandoor however generally we won’t have it at home so we can use a stove or oven. This naan is prepared using iron tava and cooked on stove flame/heat. The texture and taste is very close to the clay tandoor. To make soft and fluffy naan leave the dough for overnight after preparing. You may have to try it few time before it starts coming up nice. Enjoy restaurant style naan at home with your favorite curry.

Poha Chivda (Maharashtrian) Snack

Poha chivda is a popular Maharashtrian craving snack which goes very well with tea or coffee. There are many variations of this recipe. Normally, this snack is made during Diwali however you can make it any time and relish. I learnt this recipe from one of my Marathi friend Shilpa Padole. She is expert in making this and whenever we go to her place, she packs us a full box of it. To prepare this recipe, you would need thin poha or chivda which could be easily found in Indian grocery store. Dry roasted chivda coated along with all the ingredients makes it a very delicious snack. You can add cashew nuts and raisins as per you taste.

Baked Bhakarwadi

Bhakarwadi is a tea time snacks item which is traditionally a spicy Maharashtrian snacks prepared using hot spices and deep fried in oil. In this recipe instead of deep frying, I have baked it in oven however both of them tastes similar. The fillings for the Bhakarwadi can be customized to your taste. Generally it has sweet and sour taste and nice aroma of spices. The outer crust is made either from all purpose flour or a mixture of  besan and regular wheat flour. If you don’t like the baked one, you can just deep fry instead of baking. Bhakarwadi can be store in a air-tight container for weeks and goes well with cup of tea.

Chane Ki Kachori

Khasta Chane ki kachori is a mouthwatering snacks item famous in northern part of India. There are variety of Kachories like  Moong daal Kachori, Matter ki  Kachori, Sattu ki Kachori and so on an it all depends on the stuffing. Chane ki Kachori is made with spicy kala chana fillings in Kachori which is very Khasta & tasty. Kachori’s are nice tea time snacks and are made to the occasions as well. Kachori’s are served with coriander & mint chutney or date & tamarind chutney. One can make Chana kachori chaat by adding sweet yogurt and khatti meethi chutney. To make it easier at last minute, you can prepared the kachori balls in advance and roll and fry when you plan to serve.

Indian Blackberry Ukadiche Modak

Ukadiche modak is a delicious traditional Maharashtrian delicacy which is made during Ganesh puja to worship Lord Ganesha. Modaks are made with steamed rice flour shells filled with filling made from freshly grated coconut, jaggery, nuts, flavored with cardamom powder and nutmeg. For this recipe adding Indian blackberry a.k.a. jamun puree to rice flour gave a beautiful color to the traditional modaks. The most important aspect of making modaks is getting the perfect shape which is done by making rice flour petals and requires some practice before you can get perfection. Green Spinach & Mustard Paratha

Paratha is a popular Indian flat bread all over India. Parathas are generally served with various curries and side dishes in Indian food. There are varieties of paratha in Indian cuisines like stuffed paratha, plain paratha or veggie parathas. This paratha recipe is prepared using wheat flour, spinach & mustard leaves which is very healthy and easy to make. This paratha is a simple layered paratha.This green paratha is very convenient to pack for kids lunch boxes with dry curry. Normally kids don’t like to eat spinach in its other forms so this is a good option to feed them the same. Veg Pizza Pav (Dinner Roll)

Pav is an Indian bread which is used in making many street foods such as dabeli, pav bhaji, vada pav and many more. Making pav is easy and made with all purpose flour (maida) or refined wheat flour. Other ingredients include salt, milk, yeast and butter. Making pav is simple & easy however it is very important to prepare a right dough mix, dough rising and baking time. You could easily find pav (dinner roll) in supermarkets however making fresh pav at home always tastes awesome. This recipe is made with all purpose flour but you can make it using wheat flour as well. Veggie pizza pav sound interesting, isn’t? The same pav stuffed with veggies flavored with pizza seasoning. This is perfect for lunchboxes or after school snacks for kids. Pav is all time kids favorite and pizza pav would be a delicious twist to original pav. If you don’t want to make pizza pav, you could just make simple pav.

Green Moong Daal Dhokla

Dhokla is a yummy savory  famous Gujarati snacks. Traditionaly, it is made with gram flour (besan) and you can play with the ingredients by adding oats, quinoa or semolina to give a little twist to the taste and flavor. This recipe is about making Dhokla using green moong daal with spinach and quinoa. Quinoa & spinach gives a unique taste to the Dhokla along with providing a natural green color to it. To make it spongy you would need fruit salt  (ENO) or baking soda. You would also need Dhokla stand and steamer to prepare this recipe.
