Frankie or kati roll is a popular delicious street food in India. The Frankie could be prepared either vegetarian or non- vegetarian by just adding grilled meat either chicken or fish. This recipe is prepared using grilled/tandoori salmon fish with roasted bell peppers, onions, green lettuce and flavored with yogurt mint chutney. The outer layer used is carrot round paratha/chapati. This is really a great travel food which you can prepare and carry with you on your travel. Kids love this dish on the go and it’s very easy to serve when rolled in aluminium foil. You can always experiment with your own veggies.

Tilapia Fish Curry
Tilapia fish curry recipe is prepared using fresh Tilapia fish. Tilapia fish is very tasty and had very less fish-bones. You could also make fish kabab or grilled fish from this. Fish curry are of various varieties and in this recipe I have given the prepared which is generally using in the northern part of India. Fresh fish is available in Asian markets, if fresh is not available you could also use the frozen fish. This recipe used mustard oil for preparation as that gives a authentic taste to the fish. Chicken Appam Potli
Appam is a popular dish in south India, specifically in Kerala. This recipe is made with rice, fermented using yeast. It’s an easy recipe to prepare and generally served with either vegetable stew, chicken curry or egg curry. To prepare this dish you would need a special Appam pan generally available in Indian stores. I have add a little twist by stuffing the Appam with a chicken filling and giving it a potli shape. For the side, I prepared the slightly sweetened vegetable tomato stew. The taste turned out to be pretty awesome and the potli shape made it look more appetizing. You can also make veg colored Appam using spinach, carrot and beetroot puree.
Vegetable Tomato Stew
Stew is basically a thick soup. Stews are made either veg or non-veg and in various flavors. This recipe is more closer to Kerala’s vegetable stew which has slight sweetness and creamy texture. You can chose the vegetables of your choice as add on. Coconut milk is very important as it gives a rich taste to the stew. The stew goes very well with appam as well as rice.
Veg Couscous Pulao
Couscous is a traditional middle eastern grain made from semolina. Couscous doesn’t have its own flavor however it goes very well as a base for vegetables, chicken and, meat dishes. I have given a little twist to the recipe by adding some spices to make it a little tangy and tasteful. This recipe is a vegetarian recipe and you can use your favorite vegetables as well. The dish is very nutritious and can be prepared in short time.

Karela’s( bitter gourd) bitter taste might turn people away from it however it can really sweeten your health by virtue of its disease preventing and health promoting phyto chemical compounds.
