Kala Chana Fry (Ghugni)

Breakfast is the most important meal of the day and keeps you energetic the whole day. Kala Chana Fry aka Ghugni/ghughuni is a very popular breakfast item in Bihar. Its a very simple recipe prepared by stir frying boiled kala chana with onion and light spices.This dish is tasteful as well as healthy. It also goes very well with tea or coffee. Try this recipe, I am sure you will love it and add it to your breakfast routine.

Yogurt Dhokla Chaat

Chaats are an Indian street food, and are also personal favorites for many people! We crave for these mouthwatering chaats all the time, and now it is easier than ever to make your own chaats at home. As we know there are many variation of chaat that can be found. I have shared some chaats recipes but this chaat is different, as it is undoubtedly healthy and does not contain onion-garlic. This chaat is made with beetroot dhokla, yogurt and flavored with mint-coriander chutney, date-tamarind chutney and chaat masala. The whole ingredients incorporated in dhoklas gives a new flavor to dhokla chaat. In this recipe i have use beetroot dhokla but you can use yellow dhokla, green moong daal dhokla, pomegranate quinoa dhokla or leftover dhokla for this recipe. You can give your leftover dhokla a new taste and enjoy it as evening snack with your family and friends.   

Batata Vada ( Aloo Bonda)

Batata Vada (Aloo Bonda) is a very famous fast food in Mumbai, Maharashtra. Batata means nothing but potato. This recipe is very easy to prepare. Boiled and mashed potato is first saute’d with coriander, mint leaves, chili and ginger paste then deep fried after coating it with gram flour batter. It can be served as a snack directly, and can also be used to make popular vada pav when served with pav, mint-coriander, dry garlic and tamarind chutney. There is a slightly different version of batata vada in Gujarat where the mashed potato is mixed with green chilies, coriander leaves, and garlic paste and deep fried with gram flour batter. Enjoy batata vada with a hot cup of tea. 

Beans & Quinoa Veggie Patties

Sandwich is a very common breakfast or snacks items and also works well for kid’s lunch boxes. There are variety of sandwich you can make like peanut butter jelly, cheese, Nutella and so on. The sandwich made from this patty recipe has good amount of protein. Patties can be either veg or non-veg and can be used along with lettuce, tomato, cucumber and so on. The recipe is to prepare a veggie patty using red kidney bean, black-eyed beans, quinoa and mix of veggies. For this recipe I have used fresh boiled beans however you can used canned one too. Patties can be prepared ahead of time and stored in refrigerator similar to store bought  frozen patties. It certainly saves time early morning when everyone is in rush and helps in having a good quality breakfast. 

Mutter Corn Potli

Mutter Corn Potli is a recipe which goes very well as tea time snacks or as appetizer at parties. There are variety of snacks dishes in India and many of them are the ones which are prepared fresh and served hot. Mutter Corn Potli is very similar to popular snack Samosa however with little cute shape and a slightly different filling. Potli in Hindi is referred to a small jewelry bag. The crust for this recipe is prepared using all purpose flour and filled with sauteed peas & corn with tangy spices mix. The Mutter Corn Potli tastes awesome with date & tamarind chutney. Aloo Tikki Chaat

Chaat…irresistible mouthwatering street food famous all over India. There are variety of chaat recipes and I have shared some of the in my earlier blogs like Samosa chaat, papdi chaat basket, dahi poori papdi chaat and banana oats tikki chaat. Aloo tikki chaat is made from boiled potato flavored with spices and shallow fried on pan. You would need peas masala to prepare the chaat recipe.  The chaat is topped with onion, tomato, sweet yogurt, date-tamarind and coriander-mint chutney, crushed papdi and thin sev. Spicy, sour, sweet and tangy Aloo Tikki Chaat creates a deep craving for it as soon as you hear or smell the aroma somewhere.

Peas Masala

Peas masala is a very famous curry in Northern part of India. Usually, peas masala is made for chaats like aloo tikki chaat, papdi chaat, samosa chaat, ragda pattice or so on. This is a very simple recipe which is made using basic ingredients like dry green peas, onion, tomato, ginger-garlic and is flavored with spices. It tastes good when it is little spicy and tangy. Peas masala can also be used as curry and goes well with jeera rice or chapatti.

Papdi Chaat Basket

Chaat, just hearing the word makes your mouth water. This tangy street food is very famous all over India and loved by everyone. There are many types of chaats like samosa chaat, dahi poori chaat, chana kachori chaat, aloo tikki chaat and so on. I have already shared papdi & papdi chaat recipes earlier. This is a variation to the actual papdi chaat as I have added mini papdi baskets instead of plain papdi. Mini papdi basket is made using all purpose flour, rava and some carom seeds. I have used vegetable shortening however you can use butter or ghee instead. In order to make crispy crunchy papdi baskets, the dough should be tight and after adding shorting it should be mixed very well. To give it a basket shape, I have used mini tin tart molds. The basket can also be baked instead of deep fried. This recipe is a perfect finger food for your gatherings or parties. The papdi basket can be prepared ahead of time and stored in air tight containers to keep it crispy.
