Vegetable Sweet Corn Soup

Soup is primarily a liquid dish. There are mainly two categories of soup, one clear soup and another one thick soup. You can find variety of soup dishes and it also comes with noodles, veggies as well as grilled chicken. This recipe is a very simple, delicious and healthy soup called as vegetable sweet corn soup. The recipe is prepared using fresh sweet corn and mix of veggies. I have added oat in this soup instead of corn starch for thickness, however you can add corn starch. This is one of the favorite soup of many people and generally ordered as a starter in Indian restaurants. You can also make your own variation by adding grilled chicken to it or vegetable of your choices. Enjoy this healthy soup with your family.

Veggie Quinoa Uttapam

Uttapam is a well know South Indian breakfast dish which belongs to the dosa family. Generally most of the dosa’s are thin and crispy however; uttapam is thick and soft similar to pancakes. The batter for preparing any kind of dosa is the same however; the cooking process is different for different kinds of dosas. Uttapam is generally topped with vegetables like onions, tomatos and carrots and served with coconut chutney and sambhar. The batter for regular uttapam is prepared using 1 cup of urad daal and 3 cups of idli rice, however; in this recipe I have used red rice, quinoa, yellow moog daal and red poha to prepare the batter. This is slightly different than traditional uttapam and gives a different taste and texture to it. You can add your favorite veggies and the healthy uttapam is a perfect breakfast and after school snacks for kids.

Beans & Quinoa Veggie Patties

Sandwich is a very common breakfast or snacks items and also works well for kid’s lunch boxes. There are variety of sandwich you can make like peanut butter jelly, cheese, Nutella and so on. The sandwich made from this patty recipe has good amount of protein. Patties can be either veg or non-veg and can be used along with lettuce, tomato, cucumber and so on. The recipe is to prepare a veggie patty using red kidney bean, black-eyed beans, quinoa and mix of veggies. For this recipe I have used fresh boiled beans however you can used canned one too. Patties can be prepared ahead of time and stored in refrigerator similar to store bought  frozen patties. It certainly saves time early morning when everyone is in rush and helps in having a good quality breakfast. 

Masala Bhaat

Masala Bhaat is a Maharashtrian recipe prepared using basmati rice, mix vegetables and spiced with Goda Masala. Goda Masala is a special Maharashtrian spice mix which gives an authentic flavor to the recipe. It seems Maharashtrian wedding is considered incomplete without masala bhaat which indicates that how much people like it. In a way you can say it’s like a veg pulao, however it is more spicy and have it’s own taste. You could add vegetables of your choices in it. I learnt this recipe from one of my family friend’s Mom. She makes it so delicious that once you start eating, you can’t stop. Masala bhaat goes very well with maharastrian kadhi or curd raita.Masala Bhaat_7

Sambar Polenta (Cornmeal)

Polenta aka cornmeal is granules of corn available in grocery stores all around. The Polenta is cooked in many ways like it can be baked, grilled or fried. This recipe is prepared using boiled Polenta which is typically simmered in water with salt and ghee or butter. Polenta takes a little long time to cook and creamy texture.You could each boiled Polenta as is or It can be served many different ways. For this recipe we would prepare a sambar to serve with Polenta. Sambar is a south Indian soup which is prepared using mix of vegetables of your choice, toor daal and special sambar masala. In this recipe, I have also added green pigeon peas along with toor dal to get twist in sambar taste. There are varieties of sambar recipes available and you can use anyone if you like or you can use your own sambar recipe. Polenta used to be one of common meal item when I was young and my grand mother use to make it and serve with toor dal and spicy curry. In northern India is it referred as “Makki ka bath”. I literally love Polenta and every time I make it, it bring memories from childhood. Polenta with sambar was an awesome combination and very delicious, you could also try it with rasamCorn Meal_

Chicken Momo

Momo, is a famous dish in Nepal, Tibet and Eastern part of India however it’s slowly becoming a widespread fast food around the world. Momo, a dumpling which is steam cooked with variety of filling in it. Originally Momo was made with minced meat as filling however now there are varieties of filling which is used to make momo like mix veg, paneer, tofu or mixture of these ingredients. I have posted a veg momo recipe on my blog and this recipe is specifically for chicken based filling along with supplement ingredients. The momo dough is made using all purpose flour & fine semolina ( sooji) so generally it is white in color. I have also experimented a bit using spinach puree and it gave a beautiful green color and retaining the great taste of momo.

Tomato Carrot & Beetroot Soup

Tomato, carrot & beetroot soup is a light and healthy soup and its easy to make. Soups are all time favorite of our family. Soup is the first choice whenever we are in a restaurant. This soup is perfect for cold or rainy weather. Soups are great complement with your meal as a stater. The beetroot gives a wonderful color and as well as it makes soup more healthy. There are many kind of soup recipes like Tomato Soup, Lentil Soup, Minestrone Soup, Rasam so on. I have skipped adding any oil or butter to this recipe, however if you wish you can add butter as per your taste. The taste was awesome. Adding fresh basil leaves gives a nice aroma and taste to the soup.

Bisi Bele Bath

Bisi bele bath is one of most popular dish in Karnataka. The recipe is very similar to north Indian khichdi. In Kannada, bisi means hot, bele means daal and bath means rice hence the name. Rice and daal cooked along with veggie, spices, and jaggery makes this dish delicious. I am very fond of south Indian food and this is one of my favorite dish. The aroma of bisi bele bath masala, curry leaves, ghee and tamarind creates a craving for the food. You can use home made Bisi bele bath masala which gives an awesome freshness and taste to this dish but if not available, you could use store bought MTR Bisi bele bath masala powder. Bisi bele bath tastes best when served hot, topped with ghee along with papad and kara boondi.
