Rosemary Wheat Amaranth Crackers

Crackers are really great tea time snacks and also goes very well with either hummus or some kind of similar dip. There are plenty of crackers available in grocery stores with different flavors however making it fresh at home has it’s own charm. This recipe uses wheat and amaranth flour with fresh rosemary as ingredients. The rosemary aroma while baking is so soothing and relaxing. Wheat Berries & Stir Fry Veggies

Wheat berries is a whole grain which is good source of protein and fiber. You can prepare various recipes using wheat berries like cereal, salad or soup. You could also grind it to make flour and prepare flour based recipes. Wheat berries could take little long to cook so cooking in pressure cooker is advisable however you can cook it in a open pan too at low to medium heat. Wheat berries can be served with red beans curry, chicken curry or any other curry. For this recipe I have used stir fired vegetable along with wheat berries which make is simple, healthy and a light meal. You could always change the mix of veggies as per your choice and adding a tandoori masala to fried veggies give a zesty flavor.

Red Beans Curry

Red Beans Curry is a side dish prepared mainly from dry Red Beans. There are variety of beans available in grocery store like kidney beans, pinto beans, soybeans and so on. Using these beans you can also prepare variety of recipes like a soup, curry and salad.  Beans are good source of fiber and protein. This recipe preparation is more like Indian style Rajma recipe. The recipe is very simple to prepare basically soak the beans overnight, boil it and then cook with some spices. The curry goes very well with plain rice, jeera rice and well as poori and paratha. Beet Greens Rice Roll

Leafy vegetables like spinach, mustard, kale or beet root are very healthy and everyone should add them as part of their meal plan on daily basis. This recipe is inspired from Japanese Sushi although completely vegetarian and a different texture. The recipe is very easy to prepare basically just saute beet greens with garlic and roll it into brown rice. When served with red beans sauce it tastes amazing. I have used brown rice however you can use any other rice whichever you like. The rolls can also be served with fried yellow daal and it tastes awesome with that too. The green beets can also be just eaten with Rice, Paratha or Roti. Add this recipe as part of you lunch or dinner and enjoy!

Oats lentil Pancake

Oats Lentil Pancake is a dish which can be used for breakfast or brunch. Unlike regular pancakes which is generally sweet, this recipe is salty and spicy. It is also more are less similar to Indian set dosa. Oats and Lentils are really good for health and adding them to your food routine would give you good health benefits. As the name suggest the main ingredient for this recipe is oats and any kind of lentil based on your liking. I have used yellow moong lentil for this recipe. Oats Lentil Pancake can be served with naturally colorful corn & avocado salsa and tomato beetroot chutney. You can also serve it with coconut or peanut chutney.

Soya Methi Thepla

Thepla is a famous Gujarati flat bread dish prepared using wheat and gram flour. Since it’s a dry dish and remains good for long period, you could prepare it and carry it on your vacation travel. It also goes well for lunch boxes or a snack with a cup of tea. This recipe is prepared using methi(fenugreek), soya(dill) leaves along with basic ingredients and spices. These green vegetables gives nice aroma and great taste to Thepla. Thepla goes well with Jam and any Pickle and you don’t need a side dish with it. soya-methi_1

Mutter Corn Potli

Mutter Corn Potli is a recipe which goes very well as tea time snacks or as appetizer at parties. There are variety of snacks dishes in India and many of them are the ones which are prepared fresh and served hot. Mutter Corn Potli is very similar to popular snack Samosa however with little cute shape and a slightly different filling. Potli in Hindi is referred to a small jewelry bag. The crust for this recipe is prepared using all purpose flour and filled with sauteed peas & corn with tangy spices mix. The Mutter Corn Potli tastes awesome with date & tamarind chutney. Sabudana (Sago) Kheer

Sabudana (Sago) is a pearl shaped vegetarian ingredients which is used to prepare many dishes specifically to be eaten during religious fasting in India. Sabudana is used to prepare recipes like Sabudana Khichdi, Vada, Papad and Mix veg kababs or so on. I am sharing this Sabudana Kheer recipe which I learnt from my Mom, specifically prepared to be eaten during fasting in Navartri festival. Sabudana Kheer is prepared with slightly roasted Sabudana in desi ghee and cooked in milk and brown sugar( sugar). When topped with caramelized cinnamon flavored apple gives an amazing taste to this dish. You can also use this recipe as dessert for your get together and parties. sabudana-sago-kheer_12
