Indian Blackberry Ukadiche Modak

Ukadiche modak is a delicious traditional Maharashtrian delicacy which is made during Ganesh puja to worship Lord Ganesha. Modaks are made with steamed rice flour shells filled with filling made from freshly grated coconut, jaggery, nuts, flavored with cardamom powder and nutmeg. For this recipe adding Indian blackberry a.k.a. jamun puree to rice flour gave a beautiful color to the traditional modaks. The most important aspect of making modaks is getting the perfect shape which is done by making rice flour petals and requires some practice before you can get perfection. Besan Laddoo

Besan laddoo is one of the most popular delicious Indian sweet across all over India. Besan (gram flour) laddoo made with ingredients like roasted besan, ghee or butter, sugar and flavored with green cardamom powder and pistachios. Besan laddoo is all time favorite of my kids. The aroma of roasted besan is awesome. Normally, the sweets like laddoos are made on special occasions like Diwali, Ganesh chaturthi and other festivals, however you can make any time. The recipe for besan laddoo is very simple and easy. The most important part of recipe is right level of roasting, consistency and texture of the mix. The texture of the besan ladoo is soft however you could still feel the granularity of roasted besan. You could share laddos as gift pack to family & friends and it could last for about a month.

Eggless Chocolate Banana Cupcakes

Chocolate banana cupcakes are all time favorite of my kids. Normally cakes or cupcakes are made using egg but this recipe is egg-less, The recipe uses flax seeds and condensed milk as a replacement for egg which compensates the absence of egg in cake and makes it moist, soft and spongy. Banana gives the cake a wonderful moist texture and tender crumb that keeps the cake soft even when refrigerated. This would also be the perfect cupcake for family gatherings.

Pista Sandesh

Sandesh is a very famous Bengali delicacy dessert. It is a very soft dessert which melts in mouth while eating. On the occasion of Rakha Bandan, sharing this recipe for all sisters who would want to try it. The recipe is very easy to prepare and could be prepared on any occasion. It is prepared using home made paneer and filled with kesar mava and strawberry sauce. For presentation, I have used melted chocolate, whipping cream and some sugar candy and along with watermelon & blueberry. You can decorate it in your own way. Tradionally there is no filling in Sandesh however in this recipe the strawberry sauce and mava filling makes sandesh more rich and yummy.

 

Tricolor Burfi

Happy Independence Day to all of you!! Burfi is an Indian sweet dish prepared using condensed milk. There are varieties of burfi recipes however this one I made as Independence day special in three colors representing Indian flag. The three layers are prepared separately and then overlapped to make it tricolor. The burfi had a unique taste as it had three different flavors.

Mango Falooda

Falooda is one of the popular cool dessert in India. Mango Falooda is made with milk, mango, home made strawberry jelly, sabja seeds flavored with Rrooh Afza and khus syrup. I have used rose syrup flavored falooda sev, and you can find at any Indian store if you do not want to make it at home. Mango falooda is a refreshing dessert during the summer and really rich. 

Fig & Orange Shrikhand Tarts

Shrikhand is a very popular dessert in Maharashtra and Gujarat.  It is made from strained yogurt and sugar.  It is most often flavored with dry fruits, cardamom, and saffron. Other common flavors include fresh fruits and mango pulp, but one can be creative in flavoring Srikhand. This recipe is a simple recipe which flavors Srikhand with two different flavors one fig-maple and second orange- ginger. Each of these gives a unique taste to it. When served in mini orange tarts it makes it more appetizing.

Orange Chocolate Burfi

Chocolate Burfi, excitement! I found this recipe on master-chef (TV program) and my son was very excited to try it as he likes the colored layers of chocolate & Jelly. It is a little complex recipe and needs lot of patience to prepare; so, do try it when you have free time. The burfi came out very nice and tasted pretty good. You can also customize the thickness of layers as per your preference. The specific ingredient agar agar, used in this recipe, is available in whole foods market.
