  1. Ingredients for the stew.
  2. Heat oil in a deep pan or pressure cooker. Add ginger, cloves, cinnamon stick, green chilies, curry leaves, salt and onion, saute until onion gets slightly golden color at medium heat.
  3. Now add all chopped vegetables, turmeric powder, black pepper and saute it for 4-5 minutes.
  4. Add coconut milk and 2 cups of water into it. Cover it, let it cook nicely or if you are cooking in a pressure cooker, cook till 2 whistles.
  5. This stew goes very well with Appam. Enjoy with hot appam.
  6. Yummy!! Healthy vegetable stew is ready.
