Vegetable stew is healthy and delicious side dish, made with vegetables and coconut milk. This recipe is generally made in Kerala, and goes very well with Appam.
Ingredients
- 1/2 cup Carrots cut into long 2 inch thin pieces
- 1/2 cup French beans cut into long 2 inch thin pieces
- 1 Potato chopped in a cube
- 1/3 cup Peas
- 1/2 cup Onion fine chopped
- 1/3 cup Spinach chopped
- 6-7 Fresh curry leaves
- 1/2 tsp Ginger paste
- 1/2'' Cinnamon Stick
- 3 Cloves
- 1/8 tsp Turmeric powder
- 3-4 Green chilies chopped
- Salt to taste
- 1 cup Coconut milk
- 3 tbsp Oil for cooking
- 1/4 tsp Black pepper
