Veg Stuffed Ragi Paratha is made from Ragi and mix of vegetables. Ragi is very healthy for any meal. This recipe can be made only from Ragi flour however it’s comes out better if you add other flours like jowar flour, bajra flour and wheat flour. It goes very well with curd.
Ingredients
For Stuffing
- 2 medium Boiled & mashed potatoes
- 7-8 French beans
- 1/2 cup Peas
- 7-8 Baby carrots
- 6-7 stamp Green garlic or 6-7 cloves of garlic
- 1/2 cup Coriander leaves
- 1 tbsp Whole coriander seeds crushed
- 1/2 tsp Fennel seeds
- 1/4 tsp Red chili or 3 green chili
- 1/4 tsp Turmeric powder
- 1 tsp Coriander & cumin powder each
- 2 tsp Amchoor powder
- 1-1/2 tbsp Oil
- Salt to taste
For dough
- 1 cup Ragi flour
- 1/2 cup Wheat flour
- 1/4 cup Jowar flour
- 1/4 cup Bajra flour
- 1 tbsp Ghee for greasing
- 1/4 tsp Baking powder
Instructions
For Veg stuffing
- Heat Oil in a deep pan or kadhai at medium heat. Once it is hot, add fennel seeds, once fennel feeds crackles, add crushed coriander seeds in to it. Saute for few sec. Add grind vegetables, turmeric powder, chili powder and salt in to it, saute for 5-6 minutes at high heat. Stir it continuously to avoid it getting burnt.
