Tomato soup is a starter dish. It is prepared using tomatoes and mix of some herbs and spices. The recipe is very easy to prepare and goes well either for lunch or dinner. Tastes best when served hot with croutons or garlic bread stick.
Ingredients
- 5 Red tomatoes chopped
- 1 small size Yellow onion chopped
- 1/3 cup Carrot chopped
- 1 tbsp Garlic chopped
- 2 tbsp All purpose flour or boiled sweet potato
- 1 tsp Dried basil leave
- 2 tbsp Butter
- 1 tsp Olive oil
- 3 tbsp Tomato puree
- 2 tsp Brown sugar or Honey
- 1-1/2 tsp Crushed Black Pepper
- 1 tsp Celery salt or fresh celery chopped
- 3 cup Vegetable stock
- 2 tsp Heavy whipping cream for garnishing optional
- Salt to taste

You could use boiled & mashed sweet potato instead of all purpose flour for soup thickness.

Good recipe.. I add bay leaf and cinnamon stick while boiling the veggies .. Gives nice aroma and taste.
Also, for thickness I add a potato instead of all purpose flour. Rest is pretty much same !! :))
I add some grated beetroot for colour…also increases nutrition value.
