Vegetables for Tomato Rice
Instructions
  1. Chop all vegetables and keep them aside. You can make this recipe with left over rice or cook rice as mentioned in the recipe notes.
  2. Heat oil in a kadhai at medium heat. Add mustard seeds, once it crackles, add cumin seeds and channa daal in to it. Once it gets brown, add chilies, curry leaves and hing. Saute it for 10 sec. Add ginger and saute it till gets slightly brown. Add beans and carrot and saute for about 1 minute at medium heat. Add peas and salt and saute it for 30 sec more.
  3. Add chopped tomatoes and turmeric powder in to it.
  4. Mix it well and let it cook with lid on until tomatoes gets mushy. Add bell peppers, garam masala and Bisibele bath masala powder and cashew-nuts, cook it for another 1 minutes.
  5. Add cooked rice and coconut milk. Stir it till rice well coated with tomato mix/masala.
  6. Turn off the heat. Cover it and keep for aside for 10 minutes so that rice gets tomato mix flavor.
  7. Tomato rice with vegetables is ready to be served.
  8. Serve it warm with raita or plain curd.
Recipe Notes

To make plan Basmati rice::

Take 1 and 1/2 cup Basmati rice. Rinse the rice in running water and soak it in water for 15 minutes. Cook the rice in 3 cups of water into rice cooker. It will be ready in about 25 minutes. Refrigerate the cooked rice for at least 1 hour to avoid it getting mashed up while make the tomato rice.
