Stuffed Aachari Tindora is a dry side dish which is famous in Northern parts of India. This achaari flavored stuffed Tindora is great compliment with rice and daal and brings change to your daily meal. This tiny tindora has its own slightly sour taste and it can be prepared with less oil. Tindora can be prepared as a dry or curry dishes in different flavors. Its easy to make & tastes awesome.

Instructions
Spice ingredients for the stuffing. (To make aachari masala, take 1/2 tsp mustard seeds, 1/2 tsp carom seeds, 1/2 tsp kalonji, 1/4 tsp fenugreek seeds and 1 tsp fennel seeds in a pan. Dry roast together until aromatic. Grind it and make a fine powder.)
Clean the Tindora and slit it on 4 sides using a knife; make sure you don't cut the edges. Keep it aside.
Heat oil in a pan at medium heat, add tomato puree and all spices which is listed in the ingredient list. Saute it for 2-3 min at low to medium heat with 2 tbsp water until the masala gets little dry. Turn off the heat and let it cool.
Stuff the sauteed masala in slitted tindoras. Stuff rest of the tindoras following same process.
Heat 2 tsp oil in a pan or kadhai, add stuffed tindoras into it. Let it fry for 5-6 min at medium heat with lid on. Flip the tindoras to other side and pour 2 tsp oil on it and fry it for 6 mins or until a golden color.
Fry it until all sides are a golden color. Turn of the heat.
Stuffed aachri Tindora or kudurni is ready to be served.
Enjoy this yummy dish along with dal and rice.
