Steamed Dahi vada

Steamed dahi vada is a minor variation of regular version of dahi vada. In this recipe vada is not fried rather steamed. This make it more healthy and more fat free. The taste is as good as regular dahi vada.

  1. Ingredients for Steamed vada. Clean daal and soak it for overnight.
  2. Grind daal without water in a grinder. If water is required than add very little water and make a nice paste. Place the mixture in a mixing bowl.
  3. Mix the batter with big spoon in a circular motion for 10-12 minutes so that batter gets fluffy and light. For checking the batter, drop a small piece of batter in water and it should float.
  4. Add ginger, hing, crushed black pepper, cumin seeds and coriander leaves in the batter and mix well and make a consistent mix. Add baking soda and mix it well.
  5. Add 2 cups of water in to steamer and let it boil. Meanwhile grease the idli stand with some oil. Place little portion of batter on your fingers and make a hole in center using thumb, place it on idli stand. Fill all the slots of idli stand with vada and steam it for 15 minutes at medium heat. Turn off the heat once its done, and leave the stand in steamer for about 10 minutes.
  6. Remove the steamed vada from the idli stand. Soak steamed vada into the warm salty water for 6-7 minutes. Take out the vada from the water and squeeze lightly between palm and place it in a serving tray. Let the vada cool down completely.

  8. In a mixing bowl, add dahi, milk, sugar, salt and whisk it very well.
  9. Pour dahi mixture on vada. Cover the vada tray completely with Dahi mixture and leave it for about 2 hours at kitchen counter. Garnish with chaat masala, chili powder and black salt. Keep dahi vadas in refrigerator.
  10. At the time of serving garnish it with roasted cumin powder, sweet chutney, green chutney and black salt. Serve it cold.
