Roasted broken cashew nuts

Milk powder

Instructions
Take one cup of broken roasted kaju.
Grind it in small batches to make a fine powder.
Sift the cashew nut powder using a strainer.
Store the remaining cashew nut chunks separately.
Chop the paan leaves.
Grind paan leaves and cashew nut chunks along with 1/4 cup of water to achieve a smooth texture.
Heat 1/2 cup of sugar in a heavy bottom pan with paan & cashew mixed with food color at medium heat. Stir continuously.
Once it starts boiling, reduce the heat to low. Add cashew nut powder and 3 tbsp milk powder. Stir and mix it very well. Add rose essence.
Cook the mixture until it forms a dough consistency by stirring continuously. Once it’s done, turn off the heat.
Place the cashew nut, paan mixture onto a silicone mat. Let it cool little bit. Knead the dough using a rubber spatula.
Then, spread it in to flat plate or 6” cake pan evenly.
Spray gold food color on it or put some silver vark on it. Cut into diamond shape.
Paan kaju katli/burfi are ready for your Diwali celebrations.

Recipe Notes
Grinding cashew (kaju) powder is little tricky, always grind it in small amount at a time and sift it using strainer.
