Mix Daal Khichdi

Khichdi is a light comfort food. It is very easy to prepare. Khichdi has many varieties and many of them are without vegetable basically only pulse and rice. In this recipe I have use vegetables and mixed pulses to give a different taste. You can tweak in with the vegetable of your choice.

Ingredients

  1. Ingredients for Khichdi. Wash all the vegetables, chop them and keep it aside.
  2. Wash rice and pulses. Mix all the pulses together and soak for 30 minutes and soak rice for 10 minutes before you start cooking.
  3. Place mix of pules and rice together in to pressure cooker. Add 5 cups of water, 1/2 tsp turmeric powder and salt to taste. Close the lid and cook at medium to high heat for 3 whistles for about 15 minutes. Switch of the flame and let it cool down. Check the consistency of the cooked rice and pulses and make sure it is neither very dry nor very thin. Add hot water if needed.
  4. Now, heat oil in a kadhai or pan at medium heat. Once its hot, add cumin seeds. Once cumin seeds starts crackling, add garlic, ginger and Asafoetida (hing) in to it. Saute it for 1 minute until garlic gets brown. If you want spicy ,add 1 whole red chili.
  5. Add cut vegetables, pinch of turmeric powder and little salt in to it.
  6. Saute it for 3 minutes till vegetables gets tender.
  7. Add fried vegetables in to cooked daal-rice.
  8. Mix it well with light hand. Mix Daal Vegetable khichdi is ready.
  9. Pour 2 tsp ghee on khichdi and serve it hot.
  10. Enjoy healthy khichdi with curd, pickle and papad.
Recipe Notes

1. Soaking Pulses and Rice separately and for different time helps in cooking them well as well as retaining the rice grain intact. If you soak both together and cook, the rice may get overcooked and will get mashed.

2. Cooking vegetables separately keeps it crunchy while eating otherwise if you cook it along with rice and daal that too will get overcooked and will get mashed.
