Khichdi is a light comfort food. It is very easy to prepare. Khichdi has many varieties and many of them are without vegetable basically only pulse and rice. In this recipe I have use vegetables and mixed pulses to give a different taste. You can tweak in with the vegetable of your choice.
Ingredients
- 1 cup Rice
- 2 tbsp Whole green moong daal
- 2 tbsp Toor daal
- 2 tbsp Black urad daal
- 2 tbsp Masoor daal
- 2 tbsp Moog daal
- 1 cup Cauliflower florets
- 1/3 cup Carrots chopped
- 1/3 cup Peas
- 5-6 cloves Garlic fine chopped
- 2 tsp Ginger fine chopped
- 1 tsp Cumin Seeds
- 1/4 tsp Asafoetida (hing)
- 1/2 tsp Turmeric powder
- 2 tbsp Oil
- 1 tbsp Ghee
- Salt to taste
Instructions
- Place mix of pules and rice together in to pressure cooker. Add 5 cups of water, 1/2 tsp turmeric powder and salt to taste. Close the lid and cook at medium to high heat for 3 whistles for about 15 minutes. Switch of the flame and let it cool down. Check the consistency of the cooked rice and pulses and make sure it is neither very dry nor very thin. Add hot water if needed.
Recipe Notes
1. Soaking Pulses and Rice separately and for different time helps in cooking them well as well as retaining the rice grain intact. If you soak both together and cook, the rice may get overcooked and will get mashed.
2. Cooking vegetables separately keeps it crunchy while eating otherwise if you cook it along with rice and daal that too will get overcooked and will get mashed.
