Lentil soup is a very healthy recipe for appetizer or even for light dinner. It’s made up of red lentil, however you can use any lentil to prepare this recipe. Lentil soup goes well with Focaccia Bread.
Ingredients
- 1 cup Red lentil masoor dal soaked
- 1 medium Onion chopped
- 1 medium Tomato chopped
- 1/2 cup Fresh parsley chopped
- 1/3 Cup Carrots chopped
- 1 cup Zucchini chopped
- 4 cloves Garlic chopped
- 1 tsp Celery salt or fresh celery chopped
- 1 tsp Dry tarragon
- 1/4 tsp Dry rosemary or fresh rosemary
- 1/4 tsp Turmeric powder
- 1/2 tsp Dried thyme
- 1/2 tsp Black pepper powder
- 1/2 tsp Red chili flakes
- 5 cup Vegetable stock or water
- 3 tbsp Olive oil
- Salt to taste
