Guacamole veggie patty sandwich is a healthy breakfast item or a nice lunch box item for kids. This patty is not fried so less oily and guacamole is very good for health. You can use your choice of vegetables for the patty and customize the sandwich filling as well.
Ingredients
For Veggie Patties
- 2 medium size Potatoes boiled & mashed
- 1/2 cup Soy chunks
- 1/2 cup Shredded carrots
- 1/2 cup French beans
- 1/2 cup Peas
- 1/2 cup Chopped coriander leaves
- 1/2 cup Green bell Pepper
- 1/2 cup Red bell pepper
- 2 tsp Garlic & ginger paste each
- 2 tsp Coriander and mint chutney or mint leaves chopped
- 1/3 cup Bread crumb if needed more u can add more
- 1/4 cup Corn starch
- 2 tbsp Oil
- 2 tsp Fennel seeds
- 1/4 tsp Turmeric powder
- 2 tsp Coriander & cumin powder each
- 1 tsp Gram masala powder
- 2 tsp Chaat masala powder
- 1/4 tsp Red chili powder
- 2 tsp Amchoor powder or lemon juice
- Salt to taste
Guacamole
- 2 Ripe Avocado
- 1/2 cup Chopped coriander leaves
- 1 Tomato remove the seed and fine chopped
- 5 cloves Garlic fine chopped
- 1 Chili fine chopped
- 1/2 lemon juice
- 1/4 tsp Black pepper powder
- 1/3 cup Onion fine chopped
- Salt to taste
For Sandwich
- 3-4 lettuce leave
- 10 Cherry tomatoes
- 2 Tomatoes slices
- 1 Cucumber slices
- Onion rings
- Cheese slices optional
- 1 pack Wheat mini pav
Instructions
- Add squeezed soy chunks, all vegetables and saute it for 10 -12 minutes till vegetable gets tender. Add coriander-cumin powder, chaat masala powder, garam masala, red chili, amchoor powder, and mint chutney and saute it for 5-6 minutes. Add mashed potato to the pan and mix it very well. Lastly add coriander leaves and bread crumbs, mix it well. Let it cool down.
