Green Spinach & Mustard Paratha

Paratha is a popular Indian flat bread all over India. Parathas are generally served with various curries and side dishes in Indian food. There are varieties of paratha in Indian cuisines like stuffed paratha, plain paratha or veggie parathas. This paratha recipe is prepared using wheat flour, spinach & mustard leaves which is very healthy and easy to make. This paratha is a simple layered paratha.This green paratha is very convenient to pack for kids lunch boxes with dry curry. Normally kids don’t like to eat spinach in its other forms so this is a good option to feed them the same. Instructions
  1. Clean the leaves with water and coarsely chop them in a food processor or using knife.
  2. Combine all the ingredients in a mixing bowl. Add little by little water into it . Knead the dough to make a smooth soft dough. Once it's done, cover it and keep it aside for 10 min. After 10 min, knead the dough again for another 1 minute.
  3. Divide the dough into 20 equal portion and give a round shape. Dust it with dry wheat flour, cover it with clean cloth. Take one dough ball on wooden surface, dust with flour and roll it to give a round thin shape. Apply some oil on it and roll it as shown in picture.
  4. Again fole along the edge to make a layered round ball. Dust it with flour.
  5. Roll it using by rolling pin into round paratha shape.
  6. Heat Iron skeleton or tava at medium to high heat. Once it's hot, bring the temperature at medium heat. Place the raw paratha on hot tava. Meanwhile, make the other patatha following the same process also keep watching the paratha which is on the tava. When you see small bubble on patatha, flip it to other side and apply some oil. Turn it over and apply some oil on the other side. Roast from both side till slightly golden color from both side.
  7. Once it's done, remove it from tava and keep it in covered container . Make all parathas following the same process.
  8. Spinach & mustard paratha is ready to be served. Serve it hot with any Indian curry and raita.
  9. This paratha can be packed with dry curry or just sauce for kids lunch boxes
