Dhokla is a yummy savory Β famous Gujarati snacks. Traditionaly, it is made with gram flour (besan) andΒ you can play with the ingredients byΒ adding oats, quinoa or semolina to give a little twist to the taste and flavor.Β This recipe is about making Dhokla usingΒ green moong daal with spinach and quinoa. Quinoa & spinach gives a unique taste to the Dhokla along with providing a natural green color to it. To make it spongy you would need fruit salt Β (ENO) or baking soda. You would also need Dhokla stand and steamer to prepare this recipe.
Ingredients
For Dhokla Batter
- 1/2 cup Whole green moong daal soaked into water for overnight
- 1/3 cup Dry roasted quinoa
- 1-1/2 cup Baby spinach
- 1/4 cup Gram flour( besan)
- 3 tbsp Rava
- 3/4 cup Thick yogurt
- 3 tsp Sugar
- 1/8 tsp Turmeric powder
- 2 tsp Ginger paste
- 3 Green chili
- 1/8 tsp Asafoetida (hing)
- 1/2 tsp Citric acid (limu ka ful)
- 2 tbsp Oil
- 1-1/2 tsp Salt
- 2 tsp Fruit salt (ENO) or 1 tsp baking soda
- 1/2 cup Water
For Tempering & Garnishing
- 3 tbsp Oil
- 2 tsp Black mustard seeds
- 2 tsp Sesame seeds
- 5-6 Fresh curry leaves
- 3-4 Green chili thinly sliced
- 3 tbsp Freshly sherdded coconut
- 3 tbsp Freshly sherdded carrot
- 2 tbsp Freshly shredded beetroot
- 1/4 cup Chopped coriander leaves
- 2 tsp Sugar
- 1/4 cup Tamarind & date chutney
- 1/4 cup Coriander & mint chutney
Instructions
- Clean 1/4 cup whole moong daal with water and soak it overnight. Dry roast the quinoa at low to medium heat till slightly golden color or till aromatic, ensure it doesn't get burned or overcooked. Grind roasted Quinoa to make a fine powder. You can make this flour ahead of time. Grind 1/2 cup soaked green moong daal along with spinach and green chili with 1/2 cup water and make a paste.
- To make dhokla, you need dhokla steamer and stand. Add 3 cup water into steamer and let it boil at medium to high heat. Grease the dhokla thali with oil. (For this recipe you would need two thali). Once steam start coming out, add 2 tsp Fruit salt (ENO) to the batter and mix it very nicely. ENO helps in making Dhokla light and fluffy.
- To prepare tempering, heat oil in a frying pan. Once its hot add mustard seeds, once it start crackling, add sesame seeds and wait till it gets brown color. Add curry leaves and green chili into it and cover immediately so that it does not splash all around. Wait till chili gets brown color. Add 3 tbsp water and 2 tsp sugar and mix. Turn off the heat.

This is an awesome recipe, will try. Can i make dhokla in microwave instead of steam? If yes how much time approx in microwave?
