Focaccia Bread is a Italian bread which is flat and oven baked. The bread is generally topped with various herbs. Rosemary gives a wonderful aroma to bread. The bread is served with olive oil and can also be topped with olives, mushrooms, green onion and tomatoes. It tastes very good and certainly different than any normal bread. It is used as side during the lunch or dinner.
Instructions

Mix 1-1/4 cup lukewarm water, yeast and sugar in a bowl. Cover it and keep in warm place for about 10 minutes until it's fermented.
In large mixing bowl, add wheat flour, bread flour, salt, butter, oil and fine chopped rosemary. Mix it very well.
Make a well in to center of the flour mix and add yeast water in to it.
Mix with hand and make a soft dough. Add water if needed. Dough should be very soft.
Take the dough on a wooden surface, sprinkle some dry wheat flour. Grease the palm with oil and knead it using palm for about 6-7 minutes until dough gets smooth and soft. Add little flour if the dough gets sticky to make it soft and smooth.
Grease the bowl with oil which we used for kneading dough. Place the the dough into bowl, cover it and keep it in warm place for at least 1 hour.
Dough will ferment and grow to about double of it's original volume. Once fermented, take the dough out from the mixing bowl.
Line the baking tray with aluminium foil and grease some oil on top. Divide the dough in to two equal parts. Sprinkle some flour on a wooden board. Roll and stretch the dough into oval shape about 1/2 inch thick.
Place the flattened dough in the baking tray, Pour 1/4 cup olive oil on it and spread it evenly. Make some dimples by your finger on the surface of the dough. Cover with plastic wrap and leave in a warm place to rest, about 30-45 minutes.
Sprinkle some rosemary leaves in to the dimples. Take minced garlic and oil into a bowl, mix it and grease on top of the dough. Sprinkle some sea salt on it.
Meanwhile preheat the oven to 400 degree F. Place the tray into hot oven on middle rack. Bake it for 20-25 minutes until golden brown.
Once done, take it out from the oven. Let it cool down. Cut the bread in pieces. Keep it covered to avoid dryness.
Focaccia bread is ready to be served.
Enjoy it warm with soup or side of an entree.
Recipe Notes
Focaccia bread can be stored in to airtight container. Just reheat for about 10 seconds in microwave before serving.

How much water need for yeast fermentation n for kneading dough?
Sorry i missed to mention. For this recipe 1-1/4 cup lukewarm water is required.
