Bottle gourd is also known as “Lauki” in northern India. It is very rich in vitamins and minerals and also very low on calories. Generally used to make as dry side dish, however this recipe is specially made in northeastern India as a rice delicacy.

- 1 Cup White Rice
- 2 Cup Chopped Bottle gourd( Lauki) Peel it before chopping
- 1/2 Cup Milk
- Salt to taste
For Seasoning
- 1/2 tsp Cumin Seeds
- 11/2 tsp Ghee
- 1 Green chili Chopped
- Pinch of asafoetida Known as Hing in Hindi
For Garnishing
- 1/4 Cup Chopped coriander leaves
- 1/4 Cup Fresh Pomegranate Seeds
Instructions
Main Dish
- In a pressure cooker, add 3 cup of water, rice, chopped bottle gourd and salt to taste. Initially keep the flame at high and once pressure is build reduce the flame to medium and cook it until 2 cooker whistle (approximately 8 minutes). Once it is cooked, make sure rice is cooked properly. Add 1/2 cup milk to the rice. Adjust the consistency by adding more milk if it's very thick.
