Instructions
  1. Clean and peel the bottle gourd. Chop it and keep it aside.
  2. Clean brown rice with water 2-3 times. Soak brown rice in to water for 15 minutes. Cook rice and lauki along with 3 cups of water and 2 tsp salt at medium to high heat. Once its start building steam, bring the temperature at medium heat and cook for 3 whistle in a pressure cooker.
  3. When done, turn off the heat and let it cool down naturally.
  4. Add milk and mix it well. Let it cool completely.
  5. Once it cools down, add curd and sugar. Mix it well. Keep aside.
  6. Heat oil and ghee in a small pan at medium heat. Once its hot, add cumin seeds, mustard seeds, urad daal, chana daal. When it gets brown, add chilies and curry leaves. Saute for few sec. Add grated ginger, saute till ginger gets slightly golden color. Add cashew nuts, saute it till cashew-nuts gets golden color. Turn off the heat.
  7. Pour the tampering into curd and rice mixture. Mix it well.
  8. Garnish with fresh coriander leaves.
  9. Delicious healthy bottle gourd curd rice is ready to be served.
  10. Enjoy it as a lunch or dinner with pickle.
