Instructions
  1. Wash black beans with water and soak it into water for overnight. Boil soaked beans with 1-1/2 cup of water and 1 tsp salt in pressure cooker till 2-3 whistle. Once its done, let it cool. Keep it aside.
  2. Heat oil in a pan at medium heat. Add onion and garlic and little salt. Saute it till onion gets golden brown, add spring onion and saute it for one minutes.
  3. Add chopped tomato in it and saute it for 30 sec. Add boiled black beans and frozen corn, pinch of turmeric powder, black pepper and gram masala into it. Saute it for one minutes. Add chili powder as per your taste.
  4. Add little water and bring it to boil. Turn off the heat. Add chopped coriander leaves.
  5. Transfer it into a bowl and keep it aside. You can prepare this mixture and used it later for omelet roll just by reheating in microwave.
  6. To make Guacamole spread, please follow the recipe mentioned below.
  7. Toast the bread into toaster, apply some butter then apply Guacamole spread on it. Place other bread on it to make sandwich. Cut it into triangular shape. Keep it aside.
  8. Heat pan at medium heat. Once it hot enough, bring the temperature on low to medium heat. In a bowl, beat 2 eggs, salt and pepper together. Add little oil in the pan and pour egg mixture on it. Cook it until the egg gets set. Flip over to cook it from other side. Cook for few sec.
  9. Flip it again and add some bean mixture over one side on the omelet and slowly start rolling from edges to make a roll.
  10. After rolling, transfer it in to plate. Make all omelet rolls following the same process.
  11. You can either serve it as whole or cut it into pieces and then serve.
  12. Enjoy hot omelet roll with guacamole sandwich.
