Dry roast barley pearl at medium heat till aromatic or slightly brown color. Once its done, soak it into water for half an hour.
Chop all vegetables and keep it aside.
Heat oil in a kadhai, add onion, celery, garlic and little salt. Saute it till slightly brown color in 10-12 minutes. Add cabbage, carrot, beans in to it. Saute it for another 8 minutes till vegetables gets tender.
Add tomato, spinach and zucchini and saute it for 5 minutes.
Add soaked barley, vegetable stock or water in to it, stir it. Cover the mix and simmer it for about 25 minutes until barley gets cook nicely.
Once its done, add chopped basil leaves, pepper powder and cook for another 2 minutes. Turn off the heat. Leave it covered.
Healthy barley minestrone soup is ready to be served.
