  1. Ingredients for Baingan Bharta . Boil/bake the potato, peel it and mash and keep it aside.
  2. Clean the baingan (Brinjal) and tomatoes. Slit the baingan (brinjal) into long side all around about 6 places, fill 1 or 2 green chilies and 2 cloves of garlic in silted part. of baingan (brinjal0. Line the iron net with aluminium foil, so stove will not get spoiled, grease some oil on top. Put the line iron net on gas/electric stove. Place the baingan (brinjal) and tomatoes on the net, let it grill from all sides at medium heat till it gets soft. Once it is cooked well it would become very soft. Turn off the heat. Let it cool down.
  3. Peel the Baingan and tomatoes and mash them. In mixing bowl, add boiled mashed potato, tomatoes and baingan (brinjal), mix together and keep it aside.
  4. Heat oil in a deep pan. Add cumin seeds and mustard seeds, once its get brown color. Add curry leaves, green chilies, saute for few seconds. Add ginger & garlic paste, saute till slightly golden color. Add onion and salt, saute till onion gets translucent.
  5. Add hing, turmeric powder, coriander & cumin powder, saute for 2 min at medium heat.
  6. Add mashed baingan (brinjal), tomato, potato and mix it very well. Let it cook for 5 minutes. Turn off the heat and garnish with coriander leave.
  7. Baingan ka bharta is ready to be serve. Roasted Baingan and tomato, gives a awesome smoky flavor to bharta . Serve it hot with roti, or litti.
