Baingan (eggplant) Bharta recipe is prepared using roasted baingan. There are many dishes you can be prepare using baingan, like a baingan bhaja, pakodas, sabji or so on. Roasting baigan on coal based furnace gives a nice smoky flavor and tastes delicious. In this recipe, baingan has been roasted on coil based electric stove. You can also roast on a gas stove. This is mainly a Punjabi dish and very popular in Northern part of India. This goes very well with Bihari dish litti and also goes very well as side with paratha, rice and daal.
Ingredients
- 1 big size Brinjal/Eggplant
- 4 Tomatoes
- 1 Potato boiled or baked
- 2 Green chilies
- 2 cloves Garlic
- 3 tbsp Oil or mustard oil
- 1/4 tsp Mustard seeds
- 1/4 tsp Cumin Seeds
- 6-7 Fresh curry leaves
- 1 big size Onion fine chopped
- 1/4 tsp Asafoetida (hing)
- Salt to taste
- 4-5 cloves Garlic fine chopped
- 2'' Ginger fine chopped
- 1/4 tsp Turmeric powder
- 1 tsp Coriander and Cumin powder each
- 1/3 cup Coriander leaves chopped

- Clean the baingan (Brinjal) and tomatoes. Slit the baingan (brinjal) into long side all around about 6 places, fill 1 or 2 green chilies and 2 cloves of garlic in silted part. of baingan (brinjal0. Line the iron net with aluminium foil, so stove will not get spoiled, grease some oil on top. Put the line iron net on gas/electric stove. Place the baingan (brinjal) and tomatoes on the net, let it grill from all sides at medium heat till it gets soft. Once it is cooked well it would become very soft. Turn off the heat. Let it cool down.
