Aam ( Mango) Jaljeera

Aam (Mango) is king of fruit. This is a seasonal fruit which is available during summer. This beat the heat tangy cool drink protect us from heat waves. Using raw mango one can be prepare many kind of items like spicy pickle, sweet mango pickle, jam, mango drink or so on. This recipe is prepared using mainly raw mango and honey which is flavored with assortment of spices. In northern part of India during summer there are many hawkers who sell this drink on streets. People also prepare this in their home and my mom used to make it and serve all of us to protect from heat waves. She generally used to roast the raw mango on charcoal which gives a unique smoky flavor. If charcoal is available you can use that otherwise you can roast it on stove as I have done for this recipe. You could also use the boiled raw mango to prepare this recipe so instead of roasting, just boil the mangoes. Raw Mango_5

Matcha Green Tea Frozen Yogurt

Beat the heat this summer with cool, refreshing and flavorful Matcha green tea frozen yogurt. I had previously shared Matcha Green Tea Ice Cream which is a real big hit in my family. Matcha green tea comes in powder form available in Japanese stores. The green tea powder gives a great taste to ice cream, smoothie, cake or so on. This recipe is made using hung yogurt, Matcha green tea and flavored with ginger, lemon grass and cardamom powder. This combination give a unique flavor to the recipe. I have used homemade yogurt but you can also use Greek yogurt for this recipe. I have used ice cream maker to make frozen yogurt but this can be done without ice cream maker. Lemon grass is a Asian herb which is used in Ayurvedic medicine and it has many health benefits. Dum Aloo

Aloo (Potato) is king of the vegetables. It can be used to prepare variety of dishes like curries, Paratha, fried vegetable, snacks items like aloo tikki, samosa and so on. Tasty dum aloo is a very popular North Indian dish. Dum Aloo is a very simple gravy based dish made using very less ingredients basically boiled baby potatoes which is cooked in tomato gravy and spices. My mom always added freshly grounded garam masala which gives a wonderful aroma and taste to the dum aloo. There are many way to prepare dum aloo, different ingredients gives different taste to it. This recipe is tomato base curry but you can also make it yogurt base dum aloo. We all prefer to eat green vegetables however some time making potato curry gives a little twist to daily routine specially during summer when limited green vegetables are available. Dum aloo goes well with jeera rice, roti, Paratha or poori.

Matcha Green Tea Ice Cream

Delicious Matcha Green Tea Ice Cream is a very popular dessert in Japan and now even other places people like it. I would like to welcome summer with this refreshing green tea ice cream recipe. One of my Japanese friend told me about this recipe and she inspired me to make it and share on the blog. She also told me that how much it is popular in Japan and people love to eat it. Matcha green tea, comes in powder form and used for cooking for recipes like smoothie, cake, yogurt ice cream or so on. I have tried both Matcha green tea universal quality as well as culinary quality and found universal quality gave a better result however you can use any one. This is generally available in Japanese store or Asian store (I bought it from Hana world market). The soothing color of green tea gives refreshing look as well as taste to the ice cream. I am sure you, your family and friends would love this ice cream. Making Matcha green tea ice cream is super easy. Methi Wheat Garlic Naan (without yeast)

Naan is an Indian flat bread, made with fermented all purpose flour and roasted in clay tandoor or oven. This yummy soft & fluffy bread is famous across India, and varieties of naan are served in Indian restaurants. In my earlier post, I had shared tava garlic naan using all purpose flour. The process to make wheat methi garlic naan recipe is almost similar except for the dough preparation. This recipe is made using wheat flour and fenugreek (methi) leaves and topped with garlic, coriander leaves, kalongi (nigella seeds) and sesame seeds and roasted on stove top on tava. The texture is slightly different but is still soft and fluffy and tastes great. Naan breads generally taste great with paneer or chicken curry. The texture of the wheat naan are very close to the restaurant naan. In this recipe, I have used baking soda and baking powder but you use yeast too.

Aloo Tikki Chaat

Chaat…irresistible mouthwatering street food famous all over India. There are variety of chaat recipes and I have shared some of the in my earlier blogs like Samosa chaat, papdi chaat basket, dahi poori papdi chaat and banana oats tikki chaat. Aloo tikki chaat is made from boiled potato flavored with spices and shallow fried on pan. You would need peas masala to prepare the chaat recipe.  The chaat is topped with onion, tomato, sweet yogurt, date-tamarind and coriander-mint chutney, crushed papdi and thin sev. Spicy, sour, sweet and tangy Aloo Tikki Chaat creates a deep craving for it as soon as you hear or smell the aroma somewhere.

Peas Masala

Peas masala is a very famous curry in Northern part of India. Usually, peas masala is made for chaats like aloo tikki chaat, papdi chaat, samosa chaat, ragda pattice or so on. This is a very simple recipe which is made using basic ingredients like dry green peas, onion, tomato, ginger-garlic and is flavored with spices. It tastes good when it is little spicy and tangy. Peas masala can also be used as curry and goes well with jeera rice or chapatti.

Pineapple Jam

Fruit Jam is very common breakfast item and readily available in grocery stores. This recipe is to prepares Jam from fresh pineapple at home. Fresh Jam always tastes better than stored ones and you can add your flavors to this based on your taste. This recipe is from my sister Priyanka who makes it so well and tasty. This Jam is little different that regular jam as it is slightly spiced with pepper powder, chili flakes, cinnamon powder and garam masala powder. You can either use cut store bought pineapple or cut fresh pineapple. The Jam can be stored in glass jar for about 2 months in refrigerator.
