Raw Kathal ( Jackfruit) Dum

Kathal (Jackfruit) can be used as vegetable when it’s raw or as fruit when it gets riped. In Northern part of India people mostly use it as vegetable however in South mostly people use it as fruit. Raw Jackfruit can be used to prepare variety of dishes like dry, curry or kofta. Raw Jackfruit dishes are my favorite and I have been always looking to find fresh Jackfruit, however in many of my attempts I failed to find the right one to make proper vegetable dish. Cutting raw Jackfruit requires some skills as it is very sticky, my Mom used oil to grease her palm and knife while cutting the kathal. For this recipe I have used the canned  raw Jackfruit which is available in Indian grocery stores which makes it easier as it is already cleaned and cut. I am sharing this recipe from my Mom who used to make it amazingly delicious. Boiled and roasted kathal cooked in onion and tomato gravy flavored with garam masala powder, nutmeg powder and spices. This simple curry is a great compliment with steamed rice or roti.

 

Aloo Tikki Chaat

Chaat…irresistible mouthwatering street food famous all over India. There are variety of chaat recipes and I have shared some of the in my earlier blogs like Samosa chaat, papdi chaat basket, dahi poori papdi chaat and banana oats tikki chaat. Aloo tikki chaat is made from boiled potato flavored with spices and shallow fried on pan. You would need peas masala to prepare the chaat recipe.  The chaat is topped with onion, tomato, sweet yogurt, date-tamarind and coriander-mint chutney, crushed papdi and thin sev. Spicy, sour, sweet and tangy Aloo Tikki Chaat creates a deep craving for it as soon as you hear or smell the aroma somewhere.

Tomato Carrot & Beetroot Soup

Tomato, carrot & beetroot soup is a light and healthy soup and its easy to make. Soups are all time favorite of our family. Soup is the first choice whenever we are in a restaurant. This soup is perfect for cold or rainy weather. Soups are great complement with your meal as a stater. The beetroot gives a wonderful color and as well as it makes soup more healthy. There are many kind of soup recipes like Tomato Soup, Lentil Soup, Minestrone Soup, Rasam so on. I have skipped adding any oil or butter to this recipe, however if you wish you can add butter as per your taste. The taste was awesome. Adding fresh basil leaves gives a nice aroma and taste to the soup.

Achari Murgh

Achari Murgh (Chicken) is a very flavorful delicious dish popular in Northern part of India. Achari is nothing but pickle spices (which is easily available in Indian grocery store). Chicken marinated with achari masala, yogurt and cooked into onion and tomato gravy gives a tangy taste to this recipe. Cooking this dish in mustard oil gives a nice authentic taste to dish however if you don’t want to use mustard oil, you can use other cooking oil. Achari Murgh goes well with jeera rice, plain rice, roti or naan. This is a very easy recipe to prepare.

Black Beans Omelet Roll With Guacamole Sandwich

Healthy breakfast keeps you lighter and energetic the whole day. For egg eaters omelet is a very common breakfast as it can be prepared quickly and goes very well along with bread and coffee. This recipe is a slightly different than regular omelet recipe. The filling made from boiled black beans which is saute along with onion, garlic and flavored with Indian spices is rolled inside the omelet for this recipe. This omelet roll served hot with a Guacamole sandwich instead of regular bread make is more delicious. You can find the recipe for Guacamole dip here which is used for the Guacamole sandwich. You can use canned beans instead of boiling the raw one. You could also add cheese or sour cream in it for kids.

Chana Kachori Chaat

Chaat is a type of street food which is famous all over India, especially in Northern part of India. There are variety of chaats in different flavors and taste like potato tikki chaat, Samosa chaat, Dahi poori chaat, Banana oats tikki chaat and so on. Chana Kachori chaat is a very tempting chatpatta yummy chaat. This chaat is made with Chane ki Kachori. This Chane ki Kachori topped with sweet yogurt, Coriander & mint chutney, Date & tamarind chutney, fine chopped onion and tomato and spiced with chaat masala, black salt and chili. The Chaat can be served as evening snacks or starter for your dinner.

Tomato Rasam

Rasam is a traditional south Indian soup which is prepared using rasam powder, tomato and tamarind juice. Rasam is comforting food in south India, without rasam the meal is not complete. There are many kinds of rasam like lentil rasam, tamarind rasam and many more. This recipe is made from tomato, tamarind, freshly blended aromatic Indian spices, homemade rasam powder and tempered with curry leaves, chili and mustard seeds. Added little beetroot for darker color. You can use store bought rasam powder which is easily available in Indian grocery store but homemade rasam powder gives a wonderful aroma and taste to the rasam. This recipe is mild but you can adjust the spiciness as per your taste. You can find homemade rasam powder here.

Guacamole Dip

Guacamole Dip is a very common dip. The recipe is a classic Mexican delight and is very healthy due to the avocados. The dip goes very well with tortilla chips, and is also used as a salad or side with other dishes. There are many dips with different available flavors.
