Beetroot Dhokla

Dhokla also known khaman dhokla and is an extremely poplar Gujarati delicacy. Dhokla can be prepared in two way, using instant dhokla (which is made with besan)or using fermented channa daal and rice. Both have an awesome taste and are a healthy snack item. In Gujarat, dhokla is often eating as a breakfast or snack item. Earlier, I shared a variety of khaman dhokla like green moong daal dhokla, veg sandwich dhokla, and pomegranate quinoa dhokla. In this recipe, I have used beetroot puree along with besan to give it a beautiful color, and develop a more healthy and tasty dhokla. I have also made yogurt dhokla chaat with this dhokla, which has an amazing taste. You can make dhokla chaat with leftover dhoklas and enjoy it as an evening snack

Goda Masala Powder

Masala (spices) in any Indian food is one of the most important ingredient giving an unique taste to each recipe. You could find varieties of readymade masalas in any Indian grocery store however if you want to get a real fresh taste in your dish you shall prepare it home from basic ingredients. Goda Masala is one of the famous spice mix from Maharastra state. This masala is used in many Marathi recipes like masala bhaat, vegetarian, non vegeterian curry and other recipes. This fresh and aromatic masala gives a unique taste to any recipe. In fact while I was making this at home, the whole house was filled with awesome sweet-scented smell. Dagad phool is one specific ingredient which gives a very distinctive flavor to the masala. There are many versions of Goda masala recipe and people of different region make slight changes in ingredient list based on their preference/taste. Making Goda masala is really very easy as the only thing one need to ensure is that the ingredients are roasted well and don’t get burnt. Although Goda means sweet but the masala is not sweet at all. Methi Wheat Garlic Naan (without yeast)

Naan is an Indian flat bread, made with fermented all purpose flour and roasted in clay tandoor or oven. This yummy soft & fluffy bread is famous across India, and varieties of naan are served in Indian restaurants. In my earlier post, I had shared tava garlic naan using all purpose flour. The process to make wheat methi garlic naan recipe is almost similar except for the dough preparation. This recipe is made using wheat flour and fenugreek (methi) leaves and topped with garlic, coriander leaves, kalongi (nigella seeds) and sesame seeds and roasted on stove top on tava. The texture is slightly different but is still soft and fluffy and tastes great. Naan breads generally taste great with paneer or chicken curry. The texture of the wheat naan are very close to the restaurant naan. In this recipe, I have used baking soda and baking powder but you use yeast too.

Pomegranate Quinoa Dhokla

Dhokla is a savory steamed tangy, spicy and sweet Gujarati snack which is famous all over India.  Dhokla is all time our favorite Snack. There are many dhokla recipe, like a, Khaman Dhokla, Rava Dhokla, Veg Sandwich Dhokla, Green Moong Daal Dhokla, Spinach Dhokla and so on.This dhokla recipe is little different with a slight twist to traditional one. Pomegranate Quinoa Dhokla prepared using Quinoa, fresh pomegranate juice with some spices which makes it more healthy with unique taste and beautiful color. Pomegranate juice gives a tangy-sweet taste to the dhokla. Delicious Dhokla can be served with meal or as an evening snack.

Baked Bhakarwadi

Bhakarwadi is a tea time snacks item which is traditionally a spicy Maharashtrian snacks prepared using hot spices and deep fried in oil. In this recipe instead of deep frying, I have baked it in oven however both of them tastes similar. The fillings for the Bhakarwadi can be customized to your taste. Generally it has sweet and sour taste and nice aroma of spices. The outer crust is made either from all purpose flour or a mixture of  besan and regular wheat flour. If you don’t like the baked one, you can just deep fry instead of baking. Bhakarwadi can be store in a air-tight container for weeks and goes well with cup of tea.

Green Moong Daal Dhokla

Dhokla is a yummy savory  famous Gujarati snacks. Traditionaly, it is made with gram flour (besan) and you can play with the ingredients by adding oats, quinoa or semolina to give a little twist to the taste and flavor. This recipe is about making Dhokla using green moong daal with spinach and quinoa. Quinoa & spinach gives a unique taste to the Dhokla along with providing a natural green color to it. To make it spongy you would need fruit salt  (ENO) or baking soda. You would also need Dhokla stand and steamer to prepare this recipe.

Veg Sandwich Dhokla

Dhokla is a very famous Gujarati dish. It’s prepared with gram flour or rice. There are two types of dhokla called khaman which is prepared with fermented batter and instant dhokla. Veg sandwich dhokla is instant dhokla in a different flavor. This recipe is a sandwich dhokla with gram flour, vegetable puree and mint chutney and provides a different flavor to the original Dhokla.
