Pumpkin is a multipurpose vegetable which can be used to prepare curries as well as sweet dishes. Earlier in my blog, I have shared pumpkin cupcakes and pumpkin curry recipe. This recipe is a sweet dish popularly known as pumpkin kheer in North India and pumpkin payasam in Southern India. Freshly grated pumpkin is cooked into milk and flavoured with nutmeg powder, cardamom powder. Garnished with pista and saffron, the pumpkin kheer tastes awesome. It’s good to use fresh pumpkin however if it’s not available, you can use canned. This is very easy recipe and can be prepared on any occasion.

Homemade Pav (Dinner Rolls)
Pav/dinner rolls are usually made with all-purpose flour along with yeast as a main ingredient. These small soft pav breads are famous all over India, especially in Mumbai. In Mumbai, these pav are commonly found in street foods like a pav bhaji, vada pav, samosa pav and so on. These pav can be find any super markets but nothing better taste than homemade freshly baked pavs, and my son is a big fan of these freshly made pavs. I have already shared the veggie pizza pav bread. This recipe is simple and very easy to prepare but the most important part is the dough consistency and kneading of the dough. The pav dough should be very sticky and should be well kneaded until gluten is formed in the dough which makes the pav soft and fluffy. This recipe made using maida ( all purpose flour) but you can also use wheat flour, however, the texture will be slightly different. Enjoy these tasty pav at home with bhaji, vada pav or just a cup of tea.
Homemade Mango Ice Cream
Mango is the king of fruit, and a variety of delicious dishes can be constructed either with ripe or raw mango. Mango Ice Cream is an all time favorite for many people around the world. It is one of those recipes that you cannot deny in summer; it’s a must have essential to combat the heat. Mango ice cream is made with mango puree, heavy whipping cream and flavored with vanilla and mango extract. There’s nothing better and fresh like homemade mango ice cream, as it is simple and easy to make at home and an excellent dessert to present to guests. In this recipe i have used store bought mango puree but you can make it using fresh mango puree. This recipe is made using an ice cream maker, but if you do not have a ice cream maker you can check out my previous mango ice cream recipe.
Bottle Gourd( Lauki) Curd Rice
Bottle gourd (Lauki) is a vegetable which has lot’s of health benefit and everyone should add this as part of their regular diet. It can be used to prepare many recipes like savory, drink, raita, curries and sweets. Bottle gourd curd rice recipe is a variation of the South Indian dish curd rice. Curd rice is made with over cooked rice or left over rice, curd ( yogurt) and tempered with curry leaves, chilies, cashew nuts, mustard seeds, cumin seeds and garnish with coriander leaves and pomegranate seeds. It seem meal is incomplete without curd rice for many people. Curd rice is also distributed in temples as prasad. This recipe is prepared using brown rice instead of normal rice, bottle gourd, curd ( yogurt) and tempered with spices. This is very good for digestion and easy to make. Try this recipe with the twist of bottle gourd and enjoy.
Ghevar With Raspberry Rabri
Ghevar is a very popular Rajasthani dessert which is prepared during festivals like Teej, Rakshabandhan or any other special occasion. Traditionally, this awesome dessert goes really well with milk rabri. In this recipe, I have used rabri with raspberry and mango yogurt which gives it a sweet and sour taste and neutralizes its sweetness. At first it is a little complicated recipe to prepare however once you get a hang of it, it comes out really well and the effort is worth it. Ghevar is made using all purpose flour batter and deep fried in oil or ghee. Ghevar has a light, lacy and crispy texture. The two very important aspects of making Ghever are batter consistency and oil/ghee temperature. The right batter brings out the lacy texture and oil/ghee temperature helps it to rise and give the right shape and texture. Once ready, it is soaked in sugar syrup before serving. The ghevar can be stored in air tight containers for up to 2 weeks, and just before serving, soak in warm sugar syrup and garnish with raspberry rabdi and mango yogurt. I am so excited to share this recipe as it is my first time making it, and took me couple attempts to get it right.
Tulsi Ginger Lemongrass Tea
Tea is a very common hot beverage in India which is made using milk, sugar, water and dried tea leaves. Many people feel relaxed and fresh after drinking this beverage. It is also one of the commonly served beverage to guests along with salty snacks. There are varieties for tea available like green tea, herbal team, lemon tea and so on. This tea recipe is a simple recipe with added benefits of Tulsi leaves, Ginger and Lemongrass. Tulsi leave is an Indian herb also known as Indian Holy basil and it’s plant is worshiped in India. All the three ingredients are anti-bacterial and have lots of health benefits. This tea also helps when one has cough, cold and throat pains in winter and helps in fighting infections.
Rosemary Wheat Amaranth Crackers
Crackers are really great tea time snacks and also goes very well with either hummus or some kind of similar dip. There are plenty of crackers available in grocery stores with different flavors however making it fresh at home has it’s own charm. This recipe uses wheat and amaranth flour with fresh rosemary as ingredients. The rosemary aroma while baking is so soothing and relaxing. This aromatic crunchy crackers is easy to make and delicious to eat.
Buttercream Frosting
Frosting as you are know is used for decorating cakes as well as cupcakes. Though there are variety of frosting available is stores it’s always good to make them at home so that is fresh and according to your taste and flavor. You can make different kind of frosting like chocolate buttercream frosting, cream cheese frosting, orange buttercream frosting and so on. I am sharing this simple buttercream frosting recipe and other can be prepared using similar process. This recipe is little stiff consistency as I wanted to use this to create designs using Russian piping tip however you can adjust the consistency by adding milk based on your need. You could also tint it using the food color as well as add your own flavor. It’s very important to keep butter and shorting at room temperature as well as powder sugar is well sifted to make proper frosting.
