Poi leaves are also called as Malabar Spinach or Basella Spinach and generally available in Indian grocery stores or Asian market. Poi leaves are glossy, broad, deep green and thick. The pakora/bhajji made from Poi leaves tastes awesome and goes very well as snack item with tea. It can be prepared in both way either shallow fry or deep fry. In fact you can bake as well if you are worried about oil. However the best taste is in deep fried as always.

Parwal Dry
Parwal is popular vegetable in Northern India. This recipe is dedicated to my Mom. She used to prepare it for our lunch boxes along with paratha. This is supper easy to cook and goes very well with daal -rice and roti or parathas. There are varieties of recipes made using Parval like aloo-parwal gravy, stuffted parwal dry, aloo-parwal fry and dum aloo-parwa.

Bhindi also known okra /ladyfinger, can be used to make many dishes such as bhindi masala, bhindi fry, pakora and so on. Stuffed okra is a chatpata tangy side dish which goes very well with rice-daal, roti and gravy curry. This vegetable is an all time favorite for my kids. The okra is stuffed with achari masala which gives an amazing tangy flavor and makes your meal more enjoyable.

Chutneys are very essential dishes in Indian cuisine. There are a variety of chutney recipes which can be found in India. Some are sweet and some are spicy. Indian food is incomplete without chutney. This recipe is made with two fruits which have tangy and sweet taste. Apple and mango cooked with jaggrey and flavored with spices.It’s a great compliment with Paratha or with bread for breakfast. My kids love to take it to school with Paratha. It is very easy to prepare and you can store it for up to a couple of weeks in the fridge.

Carrot & beetroot kanji is a fermented tangy & refreshing drink. Generally this drink is made of with dark purple carrots or red carrots which is available in specific season however it can also be made with any variety of carrots along with red beetroot which gives the color and it’s healthy too.
