Malai Kofta is a classic, rich, creamy and delicious North Indian dish. It is a dish which is perfect for parties and gatherings on special days. This recipe showcases the flavor of Methi within the normal Malai Kofta recipe. You can make it with or without Methi. Malai refers to the cream and the koftas are deep fried paneer and vegetable dumplings. The Paneer balls stuffed with fig and nuts, added to a rich tomato cream base sauce serves as a great side dish for Naan, Parathas, Kulchas and jeera rice.

Red rice cucumber roll is inspired by Masterchef TV program. I was intrigued by the recipe and wanted to try it myself. I changed the original recipe a bit by making it a different rice mix, and it came out really well. It tasted awesome and presented am entirely new taste to your taste buds. Rolling the cucumber slices is a little tricky part may require some practice.
Parwal Dry
Parwal is popular vegetable in Northern India. This recipe is dedicated to my Mom. She used to prepare it for our lunch boxes along with paratha. This is supper easy to cook and goes very well with daal -rice and roti or parathas.
