Makki Ki Roti & Sarson Ka Saag

Makki (corn flour) ki roti and Sarson (mustard) ka saag is one of the very famous Punjabi dish which is also very much liked by people in Northern part of India. Makki flour has very less amount of gluten hence it’s little difficult to make the roti (bread) out of it. Adding little bit of wheat flour makes it easier to make the roti. Kneading the flour is one of the important step while making this roti. Traditionally, the roti is made using palm of both hands by thumping both side to expand however that requires some practice, so I have used butter paper to make this roti and spread it using fingers. Generally this roti is much thicker than actual wheat flour roti and cooked in clay oven however I have cooked it on Tava top. Sarson leaves are generally available during winter season hence the dish is mainly prepared during winter. Sarson ka saag is made using mustard leave, spinach and bathua leaves. You can also add chana leaves as it gives a great taste to it. I have added little sweet corn to the saag as it reduces the bitterness of the mustard leave and gives creamy taste. Adding roasted gram flour gives thickness to the saag. The saag can be also served with normal roti or paratha. When I was kid, my Mom used to make it using roasted corn flour at home and serve with saag and ghee. I really miss those days very much. Mustard Leaves_1

 

Chicken Momo

Momo, is a famous dish in Nepal, Tibet and Eastern part of India however it’s slowly becoming a widespread fast food around the world. Momo, a dumpling which is steam cooked with variety of filling in it. Originally Momo was made with minced meat as filling however now there are varieties of filling which is used to make momo like mix veg, paneer, tofu or mixture of these ingredients. I have posted a veg momo recipe on my blog and this recipe is specifically for chicken based filling along with supplement ingredients. The momo dough is made using all purpose flour & fine semolina ( sooji) so generally it is white in color. I have also experimented a bit using spinach puree and it gave a beautiful green color and retaining the great taste of momo.

Matcha Green Tea Frozen Yogurt

Beat the heat this summer with cool, refreshing and flavorful Matcha green tea frozen yogurt. I had previously shared Matcha Green Tea Ice Cream which is a real big hit in my family. Matcha green tea comes in powder form available in Japanese stores. The green tea powder gives a great taste to ice cream, smoothie, cake or so on. This recipe is made using hung yogurt, Matcha green tea and flavored with ginger, lemon grass and cardamom powder. This combination give a unique flavor to the recipe. I have used homemade yogurt but you can also use Greek yogurt for this recipe. I have used ice cream maker to make frozen yogurt but this can be done without ice cream maker. Lemon grass is a Asian herb which is used in Ayurvedic medicine and it has many health benefits. Tomato Carrot & Beetroot Soup

Tomato, carrot & beetroot soup is a light and healthy soup and its easy to make. Soups are all time favorite of our family. Soup is the first choice whenever we are in a restaurant. This soup is perfect for cold or rainy weather. Soups are great complement with your meal as a stater. The beetroot gives a wonderful color and as well as it makes soup more healthy. There are many kind of soup recipes like Tomato Soup, Lentil Soup, Minestrone Soup, Rasam so on. I have skipped adding any oil or butter to this recipe, however if you wish you can add butter as per your taste. The taste was awesome. Adding fresh basil leaves gives a nice aroma and taste to the soup.

Non-Fried Veg Tofu Manchurian Dry

Vegetable Tofu Manchurian is an Indo-Chinese dish. It is a very flavorful, tangy and sweet & sour dish which everyone loves. Generally Manchurian balls are deep fried however this recipe tries a roasted Manchurian ball which gives exactly the same flavor and texture. The grated vegetables, bell peppers and tofu tiny balls, flavored with ginger-garlic and coated with varieties of sauce makes it delightful recipe. I have used Appam pan to roast the vegetable tofu balls however if you don’t have Appam pan you can either use any pan to roast for even bake it in oven. Similar to other Manchurian recipe this can either dry Manchurian or with gravy. Gravy Manchurian goes very well with Chinese fried rice or just plain rice. Mint Yogurt Dip

Mint Yogurt dip (chutney) is a recipe prepared from fresh mint leaves, coriander leaves and yogurt or curd. The dip/chutney goes very well with any kind of grilled/kabab starter recipes either vegetarian or non-vegetarian like grilled paneer, tofu, veggies, chicken, meat, tandoori chicken or fish. It’s very simple and easy to prepare.

Chana Poori Masala Paani

Pani poori is a most popular mouthwatering street food.This recipe is a slight variation from the normal pani poori. The poori is made using chana for this recipe (see the Chana poori recipe) and have tried two varieties of pani one regular and other one with beetroot. The taste of this pani poori is different than regular however it’s awesome. If you like a little different taste in your pani poori, just try this out.

Tomato chutney is among the various chutneys available as part of the Indian cuisine like a coconut chutney, peanut chutney, onion chutney, garlic chutney, ridge gourd chutney and so on. South Indian dishes are incomplete without chutney. The tangy and slightly spicy chutney goes very well with Idli, dosa, vada or any south Indian dishes and its really easy to prepare.
