Dhokla also known khaman dhokla and is an extremely poplar Gujarati delicacy. Dhokla can be prepared in two way, using instant dhokla (which is made with besan)or using fermented channa daal and rice. Both have an awesome taste and are a healthy snack item. In Gujarat, dhokla is often eating as a breakfast or snack item. Earlier, I shared a variety of khaman dhokla like green moong daal dhokla, veg sandwich dhokla, and pomegranate quinoa dhokla. In this recipe, I have used beetroot puree along with besan to give it a beautiful color, and develop a more healthy and tasty dhokla. I have also made yogurt dhokla chaat with this dhokla, which has an amazing taste. You can make dhokla chaat with leftover dhoklas and enjoy it as an evening snack

Gatte ki sabji( Sabzi)
Rajasthan, a state in India, has its own specialties when it comes to delicacies. Gatte ki sabji is one of that delicacy prepared using simple ingredients however has amazing taste. Though it is specialty of Rajasthan,its famous all over India. Other parts of India have their own variation of besan curry similar to to gatte ki sabji and I have shared couple of recipes of the same. It seem Rajasthani marriage celebrations are incomplete without this dish. The main ingredient of the recipe is besan (gram flour) which is used to prepare Gatte. The curry is based out of tomato, curd and mix of spices. In this recipe, I have also added fresh fenugreek (methi) leaves which make Gatte’s more delicious. Making dough for Gatte is little tricky and it should be of wheat flour chapati’s consistency. The delicious curry goes very well with Roti, Rice, Naan and Paratha.
Raw Kathal ( Jackfruit) Dum
Kathal (Jackfruit) can be used as vegetable when it’s raw or as fruit when it gets riped. In Northern part of India people mostly use it as vegetable however in South mostly people use it as fruit. Raw Jackfruit can be used to prepare variety of dishes like dry, curry or kofta. Raw Jackfruit dishes are my favorite and I have been always looking to find fresh Jackfruit, however in many of my attempts I failed to find the right one to make proper vegetable dish. Cutting raw Jackfruit requires some skills as it is very sticky, my Mom used oil to grease her palm and knife while cutting the kathal. For this recipe I have used the canned raw Jackfruit which is available in Indian grocery stores which makes it easier as it is already cleaned and cut. I am sharing this recipe from my Mom who used to make it amazingly delicious. Boiled and roasted kathal cooked in onion and tomato gravy flavored with garam masala powder, nutmeg powder and spices. This simple curry is a great compliment with steamed rice or roti.
Rolled Besan Curry
In India there are variety of food which are very local to certain areas. Rolled besan curry is one of them and mainly prepared in northern part of UP and Bihar. My mother used to make this recipe often when she used to run out of vegetables and I loved it every time. You can make this recipe without much preparation when you don’t feel like making vegetable curry. The recipe is prepared by rolling besan batter on tava and simmer into a spicy tomato based gravy. I have earlier shared a different variation of besan curry named as Besan ki Sabji. If you don’t want to make roll based, you can prepare Besan ki sabji instead. The rolled besan curry goes very well with Partha, phulka and rice.
Tandoori Salmon Masala
Salmon is very tasty protein-rich fish and have less bones. Salman can be used for varieties of recipe mainly steak, fish kabab, grilled salmon salad or curry. I have already shared Tandoori salmon recipe. This recipe is prepared with grilled tandoori salmon which is cooked in onion tomato rich gravy and flavored with Indian spices. I have add beetroot to give red color to the recipe. Tandoori Salmon masala goes well with naan, roti, Paratha or rice.
Pomegranate Quinoa Dhokla
Dhokla is a savory steamed tangy, spicy and sweet Gujarati snack which is famous all over India. Dhokla is all time our favorite Snack. There are many dhokla recipe, like a, Khaman Dhokla, Rava Dhokla, Veg Sandwich Dhokla, Green Moong Daal Dhokla, Spinach Dhokla and so on.This dhokla recipe is little different with a slight twist to traditional one. Pomegranate Quinoa Dhokla prepared using Quinoa, fresh pomegranate juice with some spices which makes it more healthy with unique taste and beautiful color. Pomegranate juice gives a tangy-sweet taste to the dhokla. Delicious Dhokla can be served with meal or as an evening snack.
Mooli ( Raddish) Paratha
Mooli Paratha is a type of bread which is famous in Northern part of India. There are many types of paratha recipes like Aaloo mutter gobhi paratha, gobhi paratha, methi paratha, green spinach & mustard paratha, Kale & Spinach Lachha Paratha or so on. Paratha’s could be either stuffed, plain or veggie mixed with dough. Paratha goes very well with raita or pickle along with a cup of tea at breakfast. Mooli paratha can be made either stuffed or mixed with flour. This recipe is non-stuffed version of Mooli paratha made with grated mooli, mixed with wheat flour and some spices. Mooli paratha can also be enjoyed with gravy based curries and is perfect for lunch boxes.
Chane Ki Kachori
Khasta Chane ki kachori is a mouthwatering snacks item famous in northern part of India. There are variety of Kachories like Moong daal Kachori, Matter ki Kachori, Sattu ki Kachori and so on an it all depends on the stuffing. Chane ki Kachori is made with spicy kala chana fillings in Kachori which is very Khasta & tasty. Kachori’s are nice tea time snacks and are made to the occasions as well. Kachori’s are served with coriander & mint chutney or date & tamarind chutney. One can make Chana kachori chaat by adding sweet yogurt and khatti meethi chutney. To make it easier at last minute, you can prepared the kachori balls in advance and roll and fry when you plan to serve.
