Bhindi/Okra is one of the popular vegetables and loved by many people. It can be prepare in any form be it dry, stuffed, or curry. You can prepare variety of dishes using Bhindi and different places have their own variations.This recipe is generally prepared in the state of Bihar and has a mustard flavor. This recipe is prepared by cooking sauteed bhindi in onion, tomato and mustard gravy. This curry goes very well with phulka, parata or plain rice. Vegetable Tehari
Tehari is a colorful and delicious rice dish very similar to veg pulao. This dish is very popular in Northern part of India specially in Uttar Pradesh. This is a very easy recipe and can be prepared when you are in rush. The rice is mixed with chopped vegetables and cooked together with aromatic spices. You can add any vegetables of your choice but generally cauliflower, potatoes, beans, tomatoes, peas and carrots provide an amazing taste. It is served with raita, or curd and papad. Enjoy this either during rush hours or during the weekends for a light lunch/dinner.
Beans & Quinoa Veggie Patties
Sandwich is a very common breakfast or snacks items and also works well for kid’s lunch boxes. There are variety of sandwich you can make like peanut butter jelly, cheese, Nutella and so on. The sandwich made from this patty recipe has good amount of protein. Patties can be either veg or non-veg and can be used along with lettuce, tomato, cucumber and so on. The recipe is to prepare a veggie patty using red kidney bean, black-eyed beans, quinoa and mix of veggies. For this recipe I have used fresh boiled beans however you can used canned one too. Patties can be prepared ahead of time and stored in refrigerator similar to store bought frozen patties. It certainly saves time early morning when everyone is in rush and helps in having a good quality breakfast.
Chicken Masala
There are varieties of recipes which one can make using Chicken. Different states in India have different chicken masala flavor. This recipe preparation is specifically based on the one which is used in Northern part of India. For this recipe chicken is roasted and cooked in a pan and then mixed with beetroot & tomato based gravy. Using whole spices in the preparation gives awesome garam masala flavor. Chicken masala goes well with plain rice, jeera rice, paratha, naan or phulka. We all loved this recipe, even kids too as I did not make it very spicy. Tandoori Gobhi
As you hear the sound Tandoori, it gives you a spicy, tangy and mouthwatering sensation. There are varieties of non-veg based Tandoori recipes however Tandoori Gobhi is vegetarian recipe and is an excellent starter or snacks item. This recipe is prepared using cauliflower florets marinated in hung curd, tandoori masala and other spices and grilled in oven. If cooked in clay based oven, it would have an amazing aroma and smoky flavor. You can also cook it in gas based oven or on griddle. Dum Aloo
Aloo (Potato) is king of the vegetables. It can be used to prepare variety of dishes like curries, Paratha, fried vegetable, snacks items like aloo tikki, samosa and so on. Tasty dum aloo is a very popular North Indian dish. Dum Aloo is a very simple gravy based dish made using very less ingredients basically boiled baby potatoes which is cooked in tomato gravy and spices. My mom always added freshly grounded garam masala which gives a wonderful aroma and taste to the dum aloo. There are many way to prepare dum aloo, different ingredients gives different taste to it. This recipe is tomato base curry but you can also make it yogurt base dum aloo. We all prefer to eat green vegetables however some time making potato curry gives a little twist to daily routine specially during summer when limited green vegetables are available. Dum aloo goes well with jeera rice, roti, Paratha or poori.
Achari Chili Tofu Roll
Achari chili tofu roll is a yummy veggie roll also known as a kati roll. Kati roll is popular snack item in northern part of India especially in Kolkata. This recipe is prepared using colorful bell peppers, onion, tofu which is flavored with achari masala and spices. The tangy filing rolled in a wheat flat bread (roti) makes it a perfect dish. For this recipe I have used homemade Indian flat bread or roti but you can also use store bought Tortillas for roll. You can customize the recipe by changing the filling content according to your taste. You could add grilled fish, chicken and paneer instead of tofu as part of the filling. Achari chili tofu roll is supper easy and it can be packed for kids or adult lunch boxes. It’s a very good recipe for travel, you can pack it and carry and eat on the go.
Hariyali Paneer Kofta Curry
Kofta dishes are famous in north India. There are varieties of kofta curries, like lauki (bottlegourd) kofta, paneer kofta, banana kofta, malai kofta & chicken kofta. Hariyali paneer kofta curry is prepared using deep fried stuffed panner in spinach balls and dipped in rich, sweet & creamy gravy. This kofta curry tastes delicious and goes very well with naan, paratha or jeera rice.
