Rasam is a south Indian lentil soup flavoured with tamarind, tomatoes and rasam powder. Rasam can be served as a soup or as a side for white rice. Rasam powder is easily available in Indian grocery store however fresh homemade rasam powder gives a wonderful taste and aroma to your rasam. The rasam powder is made with blend of Indian dry roasted spices. In southern part of India, people make rasam powder or any spices mix in a bulk and it comes in various varieties. You can adjust the spiciness by adding chili & black pepper corn in this recipe as per your choice.

Kalakhattha Mango Stuffed Khandvi
Khandvi is a Gujarati snacks which is made with gram flour(besan). I have shared another version of Khandvi earlier and you can find it here. Making khandvi is easy however it’s very important to get the right consistency of batter. Kalakhattha khandvi uses ingredients like Indian blackberry (Jamun), beetroot and some spices and stuffed with khatta meetha raw mango chutney or chundo. Jamun and beetroot gives a nice color and different taste then normal khandvi. The khatta meetha and tikha taste of this recipe gives a nice twist to khandvi. All colors are natural color in the recipe.
Stuffed Khandvi
Khandvi is a famous Gujarati snacks. Khandvi is prepared using besan (gram flour) and curd and tempered with curry leaves, mustard and sesame seeds. Making it first few times until you get hang of it, requires lot of patience. The very important step is getting the mixture consistency right and time taken to spread. It took me three iterations to get the right consistency of mixture and to make it perfect. Khandvi is garnished with fresh grated coconut and coriander leaves. I also have tried a little variation by stuffing the khandvi with shredded coconut, coriander leaves and beetroot. You can either skip the stuffing or make it as per your choice.
Red Rice Cucumber Roll
Red rice cucumber roll is inspired by Masterchef TV program. I was intrigued by the recipe and wanted to try it myself. I changed the original recipe a bit by making it a different rice mix, and it came out really well. It tasted awesome and presented am entirely new taste to your taste buds. Rolling the cucumber slices is a little tricky part may require some practice.
Sabudana Khichdi
Sabudana Khichdi is a Maharashtrian dish and mainly used during fasting. However this recipe is a variant from what is used during fasting. You may not want to use some ingredients from this which is not eaten during fasting. Please tweak in based on your tradition. It is also used as breakfast and also as snacks.
