Rasam is a south Indian lentil soup flavoured with tamarind, tomatoes and rasam powder. Rasam can be served as a soup or as a side for white rice. Rasam powder is easily available in Indian grocery store however fresh homemade rasam powder gives a wonderful taste and aroma to your rasam. The rasam powder is made with blend of Indian dry roasted spices. In southern part of India, people make rasam powder or any spices mix in a bulk and it comes in various varieties. You can adjust the spiciness by adding chili & black pepper corn in this recipe as per your choice.

Punjabi Pakora Kadhi
Kadhi is one of the easiest recipe which is made using gram flour (besan), yogurt( curd) and spices tadka. Normally, we make kadhi with bari. The bari made with besan and deep fried. Punjabi kadhi is made replacing bari with fried onion pakoras. There are variety of kadhi recipe in different part of India. Punjabi pakora kadhi is one of them. Tricolor Multigrain Idli
Idli is one of the most popular breakfast dish in Southern part of India. The recipe is generally made with rice and urad dal. This recipe is made using mutli-grain Idli flour. To celebrating the Independence Day, I have tried to make a Idlis in tri-color using fresh vegetables for colors. This recipe does not require soaking overnight like traditional Idli recipe as it uses instant multi-grain flour. Tricolor multi-grain idli, made with rava, amaranth, oats, quinoa and natural colors are from beetroot & carrot and spinach. Idli goes very well with tomato chutney, coconut chutney with or without coriander and sambhar.
Chole Masala
Chole masala is a yummy Punjabi dish which is famous all over India. There are many ways to make chole masala. This recipe is closer to the Punjabi style chole masala. The beans used for this recipe are also known as kabuli/garbanzo beans. To get the dark color of the recipe, the beans are boiled along with the tea bag; which also gives a unique flavor. Kalakhattha Mango Stuffed Khandvi
Khandvi is a Gujarati snacks which is made with gram flour(besan). I have shared another version of Khandvi earlier and you can find it here. Making khandvi is easy however it’s very important to get the right consistency of batter. Kalakhattha khandvi uses ingredients like Indian blackberry (Jamun), beetroot and some spices and stuffed with khatta meetha raw mango chutney or chundo. Jamun and beetroot gives a nice color and different taste then normal khandvi. The khatta meetha and tikha taste of this recipe gives a nice twist to khandvi. All colors are natural color in the recipe.
Tilapia Fish Curry
Tilapia fish curry recipe is prepared using fresh Tilapia fish. Tilapia fish is very tasty and had very less fish-bones. You could also make fish kabab or grilled fish from this. Fish curry are of various varieties and in this recipe I have given the prepared which is generally using in the northern part of India. Fresh fish is available in Asian markets, if fresh is not available you could also use the frozen fish. This recipe used mustard oil for preparation as that gives a authentic taste to the fish. You could use other oils, if not available.
Chicken Breast Roll
Chicken breast roll is prepared using sliced chicken breasts, spinach and mushroom as main ingredients. Generally the chicken is stuffed in tortillas or something similar, however this recipe rolls the filling inside the chicken. You can customize your filling depending on what you’re feeling in the moment. This dish can be served with a variety of sauces. The creamy tomato gravy goes very well with this recipe.
