Fettuccine is a flat thick pasta which can be used to prepare many delicious recipes based on different sauce and flavors. This recipe is prepared using boiled Fettuccine tossed in coconut milk, sweet and spicy sauce with chicken and veggies. You can add your own favorite vegetables and tofu instead of chicken if you are a vegetarian. When served with roasted broken peanuts it tastes awesome. Roasted Red Pepper Hummus
Hummus is a Mediterranean appetizer dip. This dip a small variation to the original hummus dip as I have used roasted red pepper in this recipe to give a little twist in the taste. Also, I have substituted tahini sauce with roasted sesame seeds in this recipe. I have shared a similar recipe earlier named Avocado hummus in which Avocado was a special ingredient. The dip goes very well with pita chips, crackers, falafel and fresh veggies like celery, carrots, zucchini, cucumber. You could also use it as spread in a sandwich. This dip is really easy to prepare and goes well in parties.
Sabudana (Sago) Kheer
Sabudana (Sago) is a pearl shaped vegetarian ingredients which is used to prepare many dishes specifically to be eaten during religious fasting in India. Sabudana is used to prepare recipes like Sabudana Khichdi, Vada, Papad and Mix veg kababs or so on. I am sharing this Sabudana Kheer recipe which I learnt from my Mom, specifically prepared to be eaten during fasting in Navartri festival. Sabudana Kheer is prepared with slightly roasted Sabudana in desi ghee and cooked in milk and brown sugar( sugar). When topped with caramelized cinnamon flavored apple gives an amazing taste to this dish. You can also use this recipe as dessert for your get together and parties.
Achari Chili Tofu Roll
Achari chili tofu roll is a yummy veggie roll also known as a kati roll. Kati roll is popular snack item in northern part of India especially in Kolkata. This recipe is prepared using colorful bell peppers, onion, tofu which is flavored with achari masala and spices. The tangy filing rolled in a wheat flat bread (roti) makes it a perfect dish. For this recipe I have used homemade Indian flat bread or roti but you can also use store bought Tortillas for roll. You can customize the recipe by changing the filling content according to your taste. You could add grilled fish, chicken and paneer instead of tofu as part of the filling. Achari chili tofu roll is supper easy and it can be packed for kids or adult lunch boxes. It’s a very good recipe for travel, you can pack it and carry and eat on the go.
Chicken Pesto Spaghetti
Chicken Pesto Spaghetti is a delicious Italian entree which is prepared with thin spaghetti (pasta), chicken and pesto sauce. Pesto sauce made with fresh basil leaves gives a nice aroma to spaghetti. This recipe can be used either for lunch or dinner. You can find the pesto sauce recipe here as you would need that for this recipe. You could also used leftover grilled chicken if available.
Chicken Breast Roll
Chicken breast roll is prepared using sliced chicken breasts, spinach and mushroom as main ingredients. Generally the chicken is stuffed in tortillas or something similar, however this recipe rolls the filling inside the chicken. You can customize your filling depending on what you’re feeling in the moment. This dish can be served with a variety of sauces. The creamy tomato gravy goes very well with this recipe.
