Badushah (Balushahi)

As we all know, Indian sweets are one of the most important delicacies to celebrate any occasion. Badushai a.k.a Balushahi is one of the traditional Indian sweets that is famous across India, specifically in Southern India. This sweet is made on festivals such as Diwali and Holi. It is made from stiff dough, all purpose flour, yogurt(curd), and butter which is deep fried in oil and then soaked in sugar syrup. It is more or less similar to doughnuts however more crispy, puffy and flaky in texture. Though this sweet dish takes time to prepare, it’s worth the taste and satisfaction. It comes out best when prepared at low heat so that it cooks well.  

Paan Rasmalai

Rasmalai is a delicious Bengali sweet which is popular all over India. Boiled Paneer( malai) patties soaked into flavorful milk syrup called rasmalai. Making rasmalai is easy however the key step of making soft paneer is little tricky. If paneer is not soft then paneer patties will become hard. Earlier I have shared traditional saffron, cardamom and mango flavored rasmalai. In India, people love to eat paan after lunch or dinner as mouth refresher. This recipe is made with paneer, sugar, paan leaves, kewra and rose essence milk syrup. Adding paan leaves (betel leaves) into this recipe gives a piquant aroma and refreshing taste to the rasmali. Paan flavored rasmalai comes out very tasty. if you like paan, do try this recipe I am sure you will love this unique flavored rasmalai. 

Methi Papdi

Papdi is a crunchy salty Indian cracker which goes well as a tea time snack. It is also used to prepare mouthwatering papdi chaat. It is served to guests during festivals like Diwali or Holi and once prepared can be stored for 2 weeks in air tight containers. The main ingredients for this recipe are all purpose flour, wheat flour, and methi (fenugreek).You can either deep fry the papdi or bake it, I have tried both and both come out very crispy. You can either use roasted methi or fresh fine chopped one. Enjoy this snack with your family and friends. 


Chili Chocolate Molten Lava Cake

Valentine day is pretty close by and if you are thinking to make something for your valentine or dinner party, Chili Chocolate Lava Cake is one of your best option. The cake is a delicious delight to chocolate lovers. Though the name sounds little weird rest assured it is not spicy rather chili and cinnamon powder gives a tingly and warm taste to sweetness of chocolate. The cake is crispy outside and gooey fudge inside as molten lava. Preparing this cake is very easy as a matter of fact that you can prepare the cake batter in advance and need to just bake before serving. The batter can also be stored for multiple use. The cake goes very well with vanilla or berry ice cream.   

Mutter Corn Potli

Mutter Corn Potli is a recipe which goes very well as tea time snacks or as appetizer at parties. There are variety of snacks dishes in India and many of them are the ones which are prepared fresh and served hot. Mutter Corn Potli is very similar to popular snack Samosa however with little cute shape and a slightly different filling. Potli in Hindi is referred to a small jewelry bag. The crust for this recipe is prepared using all purpose flour and filled with sauteed peas & corn with tangy spices mix. The Mutter Corn Potli tastes awesome with date & tamarind chutney. Lavang Lata ( Latika)

Lavang Lata, a sweet for which we were crazy in our childhood. Every time we went to market for some shopping, the desire to eat this sweet used to make us pester our parents until they actualy bought it.  It’s a Bengali sweet however pretty famous in Eastern UP and Bihar too. This sweet is made during festivals like Durga puja, Dipawali or Holi as well as readily available in sweet shops but homemade tastes always better. Lavang Lata is crispy on outer surface and little juicy inside. The outer layer is made using all purpose flour and it is filled with mix of milk mava and nuts. The outer layer is sealed using lavang (clove) which gives a exotic aroma to it. When served warm it tastes awesome. The richness of mava, nuts and ghee give a delicious taste. Indulge at your on risk or ensure you do some good exercise after enjoying it.

Strawberry Modak

Wishing you all a very happy Ganesh Chaturthi!!

Ukadiche Modak is a very famous Maharashtra sweet dumpling which is offered to Lord Ganesha during Ganesh Chaturthi festival celebration. Modak is made using rice flour shell which is filled with a sweet mixture of grated coconut, jaggery, poppy seeds and flavored with green cardamon and nutmeg powder. The Ukadiche modak is steam cooked. As such there are varieties of modak’s recipes like mava modak, puran modak, kesari modak and dry fruit modak. I have also published couple of modak recipes Ukadiche Modak and Indian blackberry Modak. This recipe is a another variation of modak recipe which has a filling based on strawberry. Straberry gives a unique fruit flavor as well as sweet and sour taste to the modak. Rest of the filling ingredients are same like coconut, mava and jaggery. Preparing modak first time or first few time could be a daunting task as it requires patience and some practice to get the right texture and shape. Chicken Momo

Momo, is a famous dish in Nepal, Tibet and Eastern part of India however it’s slowly becoming a widespread fast food around the world. Momo, a dumpling which is steam cooked with variety of filling in it. Originally Momo was made with minced meat as filling however now there are varieties of filling which is used to make momo like mix veg, paneer, tofu or mixture of these ingredients. I have posted a veg momo recipe on my blog and this recipe is specifically for chicken based filling along with supplement ingredients. The momo dough is made using all purpose flour & fine semolina ( sooji) so generally it is white in color. I have also experimented a bit using spinach puree and it gave a beautiful green color and retaining the great taste of momo.
