Gobhi(Cauliflower) is one of popular vegetable and there are various recipes which can be prepared using this. You can make the it either dry or gravy. Achari flavored Gobhi is a dry recipe which is tangy and flavorful. This is my childhood favorite dish which my mom used to prepare for our lunch boxes and would give us either with Poori or Paratha. This is a very easy recipe and you can add other vegetables too like potato or french beans. It tastes awesome and perfect for lunch boxes.

Achari Murgh
Achari Murgh (Chicken) is a very flavorful delicious dish popular in Northern part of India. Achari is nothing but pickle spices (which is easily available in Indian grocery store). Chicken marinated with achari masala, yogurt and cooked into onion and tomato gravy gives a tangy taste to this recipe. Cooking this dish in mustard oil gives a nice authentic taste to dish however if you don’t want to use mustard oil, you can use other cooking oil. Achari Murgh goes well with jeera rice, plain rice, roti or naan. This is a very easy recipe to prepare.
Achari Chili Tofu Roll
Achari chili tofu roll is a yummy veggie roll also known as a kati roll. Kati roll is popular snack item in northern part of India especially in Kolkata. This recipe is prepared using colorful bell peppers, onion, tofu which is flavored with achari masala and spices. The tangy filing rolled in a wheat flat bread (roti) makes it a perfect dish. For this recipe I have used homemade Indian flat bread or roti but you can also use store bought Tortillas for roll. You can customize the recipe by changing the filling content according to your taste. You could add grilled fish, chicken and paneer instead of tofu as part of the filling. Achari chili tofu roll is supper easy and it can be packed for kids or adult lunch boxes. It’s a very good recipe for travel, you can pack it and carry and eat on the go.

Stuffed brinjal dry is a side dish very popular in northern part of India. This mouthwatering tangy side dish is made using baby brinjals stuffed with indian spices and stir fried. which is made with baby brinjal. This recipe is served with rice-daal or roti as a side dish. There are varieties of stuffed brinjal recipes and varies from location to location.
Mushroom Kabab
Mushroom kabab is an awesome appetizer for parties and gatherings. There are a variety of mushroom kabab recipes, however this recipe brings a little Indian flare to it. The mushroom is stuffed with bell peppers, paneer flavored with pickle masala and marinated in yogurt and spices. When served with grilled zucchini and yogurt mint chutney it has an unique taste.
Zucchini Roll
Zucchini roll works out to be a light appetizer for you small parties or get togethers. You can prepare it either with or without crackers. This zucchini roll filling is made from wild rice, quinoa, tofu, soy mayonnaise (made at home) with achari flavor. The crackers are made using wheat flour and flax seed which gives a crunchy taste to the rolls. It came out pretty nice and had a flavorful taste.
Stuffed Okra( Bhindi)
Bhindi also known okra /ladyfinger, can be used to make many dishes such as bhindi masala, bhindi fry, pakora and so on. Stuffed okra is a chatpata tangy side dish which goes very well with rice-daal, roti and gravy curry. This vegetable is an all time favorite for my kids. The okra is stuffed with achari masala which gives an amazing tangy flavor and makes your meal more enjoyable.
Achaari Bhindi Masala
Bhindi is one of the favorite vegetable of my kids, and the most common recipe made out of it is Bhindi fry. This recipe is very light on gravy and goes well with Paratha, Phulka, or Rice. The achari masala gives a exotic flavor to the recipe. Bhindi masala can be pack for your kids lunch boxes with paratha or roti.
